Ingredients for Chocolate Chip Cupcakes
1½ cups (180 g) all purpose flour
¾ cups (90 g) cocoa powder
1 tsp (4 g) coffee powder
½ tsp (3 g) baking soda
1 tsp (4 g) baking powder
¾ cup (180 ml) vegetable oil
1½ cups (300 g) sugar
2 eggs
½ tsp (2.5ml) vanilla extract
¾ cup (180ml) milk + 1 tsp (2.5ml) white vinegar, mixed together and rested for at least 5 minutes

This day, 2 years ago I was diagnosed with Depression and Anxiety for the first time. God only knows how many episodes I may have had in the past that went unnoticed. I cannot confidently say that I am completely healed but what I can say today is that ‘I am okay.’ I could not say those words over the last 2 years. With great help and support from people who refused to give up on me, I was able to stop my medication and wean off therapy as well. I haven’t entirely closed that door yet and I bet I never will but to be aware of how bad it can get and to be able to sit in my warm bed and feel ‘okay’ and ‘safe’ are now things I do not take for granted 🤎
Mental health is a life long journey and sometimes it’s okay to not be okay.
