KOFTA CURRY 🧆❤️
Kofta Ingredients:
• Bottle gourd (lauki), 500g (grated & squeezed)
• Salt (large pinch + to taste)
• Ginger-garlic-green chili paste, 1 tbsp
• Coriander powder, 2 tsp
• Dry mango powder, 1 tsp
• Turmeric, ½ tsp
• Red chili powder, 1 tsp
• Garam masala & cumin seeds (pinch each)
• Black pepper powder ½ tsp
• Fresh coriander handful chopped
• Gram flour, 2 tbsp
• Baking soda (pinch)
Curry Ingredients:
• Tomatoes, 2 medium (chopped)
• Cashews, 6-8 (soaked )
• Ghee, 2 tbsp + oil, 1 tsp
• Cumin, ½ tsp, cinnamon 1, bay leaf 1, green cardamom 3, asafoetida ½ tsp
• Onions, 2 medium (chopped)
• Ginger-garlic paste, 2 tbsp
• Turmeric ½ tsp; Red chilli powder 1 tbsp, coriander powder 1 tbsp; dry mango powder 1 tsp
• Hot water (as needed); salt to taste; sugar 1 tsp
• Kasuri methi & garam masala (pinch each) + coriander (handful)
Method:
1. Grate & squeeze lauki (leave slight moisture). Mix with all kofta ingredients; shape into balls.
2. Fry koftas in hot oil (150°C) on med-low till golden; drain.
3. Blend tomatoes + cashews.
4. Heat ghee-oil; temper whole spices. Sauté onions golden, add ginger-garlic-chilies.
5. Add powdered spices + splash water; cook 2-3 min till oil separates.
6. Stir in puree + salt; simmer 12-15 min (add water if dry). Thin with hot water.
7. Add sugar, kasuri methi, garam masala. Drop in koftas + coriander; simmer briefly.
Serve hot with roti or chapati! 🌿🥬
