Indian-style chicken stew is a comforting, mildly spiced dish made with tender chicken simmered in a light, flavorful gravy. Ingredients for Indian style Chicken Stew :-
300 grams of chicken, cut into small pieces; bone-in works best.
Spice Powder:-
নুন স্বাদমত/Salt as per needed
গোলমরিচ গুঁড়ি ১ চামচ/Black Pepper Powder 1 Tsp.
এলাচ ২ টি/ Cardamom 2 এ
লবঙ্গ ৩ টি/Clove 3 ea.
দারচিনি ২ টি/Cinnamon 2 এ
হলুদ গুঁড়ো সামান্য/A pinch of turmeric powder.
Other Ingredients:-
গাজর একটি মাঝারি ছোটো কিউব করে কাটা/“One medium carrot, cut into small cubes
আলু একটি মাঝারি ছোটো কিউব করে কাটা/One medium potato, cut into small cubes
পিঁয়াজ ১ টি বড়ো কুচি করে কাটা /One large onion, finely chopped.
আদা রসুন বাটা ১ টেবিল চামচ /Ginger Garlic paste 1 Tbsp.
কাঁচা লংকা চেরা ২-৩ টি/“2–3 green chilies, slit.”
মাখন অথবা তেল ১ টেবিল চামচ /1 tablespoon butter or অয়েল
ধনেপাতা কুচি রান্না তে দেবার আর সাজানোর জন্য /Chopped coriander leaves, for cooking and garnishing.
জল ৫-৬ কাপ /Water 5-6 cups
Preparation :-
I’ve taken 300 grams of chicken and cut it into small pieces with bone-in; only the leg pieces have been kept whole.I’ve cut one medium potato and one medium carrot into small cubes.I’ve chopped one large tomato and one medium onion made a paste of ginger and garlic.Here I used about 5 to 6 cloves of garlic and 1/2 inches of ginger. I finely grated both of them using a grater and made a smooth paste.I’ve slit 2–3 green chilies.“lI’ve taken some coriander leaves to chop. I will use some in the cooking and keep some for garnishing. Here, I’ve washed and finely chopped about 4–5 tablespoons of coriander leaves.
Process:-
Heat butter or oil in a pressure cooker or a deep pan. Once it’s hot, add whole garam masala for tempering.
Now add the chopped onion and sauté until it turns lightly soft. Then add the ginger-garlic paste and cook until the raw smell disappears.
Add the cleaned chicken pieces, then add a little salt and turmeric, and sauté on low to medium flame for about five minutes.
After about 5–7 minutes, add the cubed potato, carrot, and tomato, and stir for another 3–4 minutes on low to medium flame.
After 3–4 minutes, add water as required. Once the water comes to a boil and has boiled for 5–6 minutes, add the slit green chilies.
If using a pressure cooker, cook for 3–4 whistles. If using any other pot, cook until the vegetables are fully tender.
Once the chicken and vegetables are fully cooked, add ground black pepper and mix well.
Just before turning off the heat, gently mash a few pieces of potato and tomato with a spoon. This will thicken the stew and make it more flavorful.
Finally, sprinkle about 2 tablespoons of chopped coriander leaves on top and simmer on low heat for 1–2 minutes. Then our Indian-style chicken stew will be ready.
After taking the chicken stew off the heat, I’ll sprinkle some chopped coriander leaves on top for garnishing. Our Indian-style chicken stew is ready. You must try it with bread.
