๐ฆ Prawns โ 300g, deveined and cleaned
๐ก Turmeric powder

1 large onion โ blitzed to a fine paste
๐ถ๏ธ Green chillies โ to taste, blitzed with onion
๐ซ Ginger paste
๐ก Turmeric powder โ for the gravy
๐ถ๏ธ Red chilli powder
๐ถ๏ธ Kashmiri red chilli powder โ for colour
๐ฅ Coconut milk โ 250ml, divided into 3 parts
๐ฅ Yogurt โ 100g, beaten smooth
๐ซ Mustard oil
๐ซ Ghee โ for tempering and finishing
๐ฌ Sugar โ a pinch
๐ฟ Garam masala โ to finish

Dried red chillies ยท Bay leaf ยท Cardamom ยท Cloves ยท Cinnamon
RECIPE
1. Clean and devein the prawns. Coat with salt and turmeric. Set aside.
2. Blitz one large onion and green chillies to a fine paste. Beat the yogurt until completely lump free. Divide coconut milk into 3 equal parts.
3. Heat mustard oil on medium flame. Once it smokes, lower the prawns in gently. Fry for about 1 minute only โ no more. Remove immediately and keep aside. Do not discard the plate โ the juices matter.
4. Add ghee to the same oil. Temper with dried red chillies, bay leaf, cardamom, cloves and cinnamon.
5. Add the onion paste and sugar. Fry on medium for 7โ8 minutes until the onion turns brown and the raw smell is completely gone.
6. Add ginger paste. Fry for 2โ3 minutes. Add turmeric, red chilli powder and Kashmiri red chilli powder. Stir intermittently so the spices donโt catch the bottom.
7. Add the first part of coconut milk. Stir, cover and cook until oil separates.
8. Add the second part of coconut milk. Stir, cover and cook until oil separates again. Drop the heat. Add the beaten yogurt and stir vigorously โ keep stirring so it doesnโt split. Cover and cook until oil separates once more.
9. Add the fried prawns along with all the juices from the plate. Let everything bubble together. Add the third and final part of coconut milk. Cover and cook for 4โ5 minutes.
10. Finish with garam masala and a spoon of ghee. Switch off the gas.
Serve with steamed rice.
