🌿Red Red Chicken Kosha Recipe ❤️

🌿Ingredients🌿
Chicken - 1 kg
Ginger paste - 3 tbsp
Garlic paste - 3 tbsp
Green chili paste - 2 tbsp
Salt - to taste
Black pepper powder - 1 tsp
Turmeric - 2 tsp
Kashmiri chili powder - 2 tsp
Lemon juice - 1/2 tsp
Sour yogurt - 2 tbsp
Mustard oil - 100 ml
Bay leaf - 1
Cloves - 4
Cardamom - 4
Cinnamon stick - 1 piece
Dry red chili - 1
Whole cumin - 1 tsp
Chopped onions - 350 gm
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Tomato puree - 400 gm
Garam masala powder - 1 tsp
🌿Method🌿
First, clean and rinse the chicken well. Cut the chicken pieces slightly larger so they don't get overcooked while browning.
For marination, mix 1 tbsp ginger paste, 1 tbsp garlic paste, 1 tbsp green chili paste, salt to taste, 1 tsp black pepper powder, 1 tsp turmeric powder, 1 tsp Kashmiri chili powder, lemon juice, 2 tbsp sour yogurt, and 2 tbsp mustard oil with the chicken. Cover and marinate for 30 minutes.
To prepare the gravy, heat 100 ml mustard oil in a pan until hot. For the tempering, add 1 bay leaf, 4 cloves, 4 cardamoms, 1 piece of cinnamon, 1 dry red chili, and 1 tsp whole cumin.
Once the spices release a fragrant aroma, add the chopped onions and fry until golden. Then, add the remaining ginger-garlic paste, stir for 1-2 minutes, then add green chili paste, turmeric, Kashmiri chili powder, coriander powder, and cumin powder, mixing everything well.
Keep the flame low, stirring the spices gently until oil separates. Avoid adding water or tomato at this point, as it affects the color.
Now, add the tomato puree and cook it without water for 7-8 minutes, adding salt to taste. Once the tomatoes release water and soften, it indicates they are well cooked.
When all the spices are thoroughly cooked, add the marinated chicken. Keep the flame low to medium and cook the chicken for 20-25 minutes, occasionally covering the pan.
Avoid adding extra water; the chicken will release its own juices while cooking. Finally, sprinkle garam masala powder and stir everything one last time.
And that's it! Delicious red-red Chicken Kosha is ready to serve. It goes wonderfully with hot rice, luchi, pulao, or fried rice.
