This will be a story rather than a recipe.
Being a middle-class boy, I was always taught from my childhood that wasting food is very bad, and that I should take only as much food on my plate as I can finish without wasting it.
Anyway, this year during Durga Puja, I went to a Bengali restaurant with my family, and we ordered rice, muger dal, jhuri aloo bhaja, and mutton curry. We enjoyed our food, but in the end, some rice was left over — specifically basmati rice, not an ordinary one. I asked the waiter to pack the rice, and I brought it home.
Puja days are always hectic, so I didn’t get time to cook. After keeping the rice in my refrigerator for two days, I decided to make egg fried rice with it. Luckily, the rice was still in really good condition and even smelled nice. So, I boiled the rice in normal water for 5 minutes and then strained it.
Making egg fried rice is so easy! First, I chopped onions, garlic, capsicum, and carrot. Then, in a hot wok, I took 2 teaspoons of refined oil. I added the garlic first, followed by the other veggies. After that, I beat two eggs and added them in. Then I mixed in the strained rice, salt, pepper, soy sauce, chili sauce, and tomato sauce. Finally, I tossed and mixed everything well. I didn’t have spring onion, but you can also add that.
Finally, the dish looked just like the photo below 😅
Anyway, I would recommend everyone to use leftover rice to make such recipes. Try not to waste food — instead, reuse and reshape it into something delicious and consumable. Cheers, and happy cooking! 🍳
