Today's Veg Menu steamed rice, Water Spinach fry, Ridge Gourd Curry with Potatoes, boiled masoor dal.
I always preferred to cook rice in a open vessel without a cooker and strained the excess water to get perfect rice.
Water Spinach fry. It is very good for our health. To make this recipe at first in a kadai add some mustard oil when oil heated add crushed garlic, small pieces of Red chillies, chopped onion and fry until it's become nicely golden colour and keep them aside. In this kadai add some mustard oil Then add chopped Water Spinach leaf,salt and cook it without lid untill it's become dry. Add fried onions, garlic and mix them. Now it's ready to serve.
Ridge Gourd Curry with Potatoes.
At first in a kadai add some mustard oil then fry the potato wedges with salt and turmeric powder and keep them aside. Then in same kadai add some mustard oil, when oil heated add some chopped onion and fry until it's become nice golden colour, then add chopped tomatoes and fry them. When oil comes out add masala paste made with cumin powder, coriander powder, dry ginger powder, red chilli powder, turmeric powder and fry until oil comes out. Next add ridge Gourd wedges, salt and cook for sometime,next add fried potato pieces,mix them properly, add water, salt for gravy. When water starts to boil add a pinch of vaja masala( made with whole cumin seeds, whole coriander seeds,dry chilli, panchforon,a small amount of cardamon,all are roasted in a empty kadai and grounded)if you want.
In a Kadai add washed masoor dal and water. Add salt and turmeric powder when boiling starts. Cooked until you get your desired consistency. Turn off your flame, add raw mustard oil and mix them, it's give you a beautiful aroma in it.
