Here is Zuppa Pisana, a traditional, hearty Tuscan vegetable and bread soup from Pisa made with white beans 🫘 , black leaf kale 🥬 (cavolo nero), and stale country bread 🥖.
Key Ingredients: Beans or cannellini
and shredded black leaf kale.
Vegetables: Celery, carrots, onions, potatoes and zucchini.
Base and finish: Tomato concentrate, extra-virgin olive oil, and day-old rustic bread.
How to Make it:
Cook the beans: Boil soaked white beans until tender. Mash a portion of them to create a creamy texture.
Sauté the base: Gently cook chopped onion, celery, carrot in olive oil.
Simmer: Add the chopped kale, zucchini, potatoes and tomato paste, and broth or water, then simmer slowly for about 2 hours.
Assemble: Place slices of stale or toasted bread in bowls and ladle the hot vegetable and bean soup directly over top.
Finish with a generous drizzle of raw olive oil.
