Crema Pasticciera/Custard Cream

Ingredients:

-400 g sugar
- 150 g flour
- 8 yolks
- 1 liter whole milk
- Peel of one lemon

The perfect custard is essential for creating the ideal St Joseph’s Zeppole. This custard recipe serves as the foundation for many delightful desserts.

I typically prepare it the night before to allow it to cool completely and set overnight in the refrigerator.

As a child, we frequently enjoyed custard cream as a warm snack. To this day, it remains a cherished comfort food for my daughters.

SAVOIARDI SARDI Snowed in
Kitchen warm.
Hearts a little heavy. 🤍❄️🇺🇸🇮🇹♥️

Today we made another batch of Savoiardi.
Not because we needed dessert.
Not because we had it all together.
But because sometimes when the world feels frozen, you soften what you can.
Eggs, flour, sugar on the counter
RAI ITALIA in the background
Cold windows, warm oven.
And for a moment, everything felt enough.
Here’s to small comforts.
Here’s to cozy kitchens.
Here’s to family we love and through food we show love.

Savoiardi Sardi

3 large eggs at room temperature
100 g sugar
100 g flour sifted
Bustina vanillina and/or lemon zest
Whip up egg whites with half the sugar to stiff peaks
Set aside
Whip up yolks with rest of sugar until creamy and pale yellow.
Add vanilla or lemon zest or both
Sift in flour to yolks gently mixing and folding in egg whites.
Pipe on tray lined with parchment paper
Bake 350 for 10 minutes. Don’t overcook.

Meet Patrizio, head butcher at Deco supermarkets, Traditionally, Sunday was a day of rest, family, and church. Since most people didn’t work, it was the one day you could spend hours cooking and gather the whole family while eating celebratory meal together.
The sauce would simmer while the family went to Mass or visited relatives, filling the house with its smell. Lucky for me in my home town of Vico Equense it’s still done today.
I can still remember getting the wooden spoon as I dunk bread in the sauce. Lol
Unfortunately these are memories of the past for many families but it’s never too late to start new traditions of the past.
