Bread with oil ( Tsitum pigigh)

2 kg flour
1 cup milk
3/4 cup oil
1 cup sugar
1 tbs mahlab
1 tbs shoumar
1 tbs instant yeast
1 tbs black seeds
Extra oil for brushing the dough
Mix all the ingredients and knead with warm water to have a nice , tender dough.Set aside for 1 hour in a warm place. Make from the dough small balls and let it rest for another half an hour. Take a ball(dough) , roll with a roller to have a circle of 35cm, brush the dough with oil.Then start to fold the circle on itself to have a long band.Decorate with a fork and join the two edges to have a round bread. Bake until brown in a medium heat, in the oven. Brush with oil while it is hot.

Traditional salad of MousaDagh ( Sarme grgud )

1 bunch of parsley , chopped
1 medium onion , chopped or fresh green onion
4-5 medium tomatoes , diced
1 cup thin bulgur
1 tsp salt
1 tsp red cayenne pepper
1 tsp powder mint or fresh mint a little.
1/2 tsp cumin
1/2 tsp allspice
1 tsp pepper paste
1 tsp tomato paste
1 lemon juice
2-3 tbs pomegranate juice.
1/4 cup oil
Mix all the ingredients to have a delicious salad . Serve with french fries and cabbage or grape leaves.

Eggplant ( imam bayelde)

Oil to fry the eggplants
5 small eggplants
A green pepper
10 cloves garlic
3 medium onions
salt, red pepper, allspice
1 tbs tomato paste
3 medium tomatoes (diced) or 1 can diced tomato

With a knife, make a small opening on each eggplant. Put a clove of garlic in each opening. Fry the eggplants in the oil. Put aside.
In a saucepan, heat 2 tbs of oil, and saute the onion, remaining cloves of garlic and the chopped green pepper. Add the diced tomato, salt, allspice, red pepper and the tomato paste. While starts boiling, add the eggplants , cook for 2 minutes more.
There is a second way to make this dish:
You can slice the eggplants, brush with oil and cook in the oven. Use the same sauce. Pour the sauce on the eggplants and continue cooking in the oven.
Can be served either warm or cold.
