Bright, creamy, and refreshingly tangy, this Lemon Cheesecake Ice Cream is a decadent homemade treat. With rich cream cheese, zesty lemon, and a luscious texture, it’s like a scoop of sunshine on a cone!
📋 Ingredients

2 cups heavy cream 🥛
1 cup whole milk 🥛
¾ cup granulated sugar 🍬
1 teaspoon vanilla extract 🌼
8 oz cream cheese, softened 🧀
¼ cup fresh lemon juice 🍋
2 tablespoons lemon zest 🍋

1️⃣ Mix the Ingredients

In a large mixing bowl, whisk together the heavy cream, milk, sugar, vanilla extract, softened cream cheese, lemon juice, and lemon zest. Mix until smooth and creamy.
2️⃣ Churn the Ice Cream

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 25-30 minutes), until it reaches a soft-serve consistency.
3️⃣ Freeze to Firm Up

Transfer the churned ice cream to a freezer-safe container, smoothing the top. Freeze for at least 4 hours, or until firm.

This yogurt cake is so fluffy it jiggles!
Try this secret Japanese-style no-flour cake—light, moist, and melts in your mouth!

How to Make Yogurt Fluffy Cake (No Flour Needed):

Ingredients:

1¼ cups yogurt
4 eggs (separated)
½ cup sugar
½ cup cornstarch
1tsp lemon zest
½ tsp vanilla extract
A pinch of salt

Procedures:

Preheat oven to 160°C (320°F). Line a round pan with parchment.

In a bowl, beat egg whites until stiff peaks form. Set aside.

In another bowl, whisk yogurt, egg yolks, sugar, lemon zest, vanilla, and salt.

Sift in cornstarch and mix well until smooth.

Gently fold in egg whites in 3 parts—don’t deflate the batter!

Pour into pan, tap to remove air bubbles.

Bake in water bath for 45–50 mins until golden and set.

Cool in oven with door ajar to prevent collapse.

More tips from the potato guy. There are "new" potatoes, and "storage" potatoes. New potatoes are way smaller, have a higher water content, and are less resilient than normal potatoes. They also have thinner skins and are less starchy.

New potatoes are more delicate, so they can’t be stored for more than a few days. New potatoes dont need to be peeled and in most cases the peels wash off with light scrubbing.

You can harvest new potatoes well before the vines die back. If you want larger, storage spuds with a thick skin that requires peeling, wait for the full cycle and the vines to die.
