Groundnut Candy (Peanut Brittle)

Ingredients

* 2 cups roasted groundnuts (peanuts), preferably skinless
* 1 cup granulated sugar
* 2 tablespoons water
* 1 tablespoon butter (optional)
* A pinch of salt

Steps

1. Prepare the ingredients: Measure the roasted groundnuts, sugar, water, butter, and salt.

2. Make the caramel: Put the sugar and water in a clean, heavy-bottomed saucepan. Heat over medium heat until the sugar melts and turns golden amber. Avoid stirring excessively.

3. Add the groundnuts: Carefully stir the roasted groundnuts and salt into the hot caramel until they are evenly coated. Add the butter if using.

4. Spread the mixture: Immediately pour the hot mixture onto a tray lined with baking parchment or a lightly greased tray. Spread it evenly with a heat-resistant spatula.

5. Cut into squares: While the mixture is still warm but firm enough to handle, score it into squares using a lightly greased knife. Be careful—the caramel is extremely hot.

6. Allow to cool: Leave the candy to cool completely until hard and crisp.

7. Separate the pieces: Break or cut along the scored lines into individual squares.

8. Serve or package: Arrange the groundnut candy on a plate or pack it in airtight food-grade bags once completely cool.

🎄 Christmas Gooey Butter Cookies
These soft, buttery cookies are rich, sweet, and wonderfully gooey in the middle! Made with cream cheese, cake mix, and festive sprinkles, they're perfect for Christmas cookie trays, holiday parties, or sharing with family and friends!
Prep Time: 15 minutes
Chill Time: 30–60 minutes
Bake Time: 10–12 minutes
Yield: Approximately 24 cookies
Ingredients
1 box (15.25 oz) yellow cake mix
1 package (8 oz) cream cheese, softened
½ cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
½ cup red and green holiday sprinkles (jimmies)
½ cup powdered sugar, for rolling
Directions
1. Preheat oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Mix wet ingredients: In a large mixing bowl, beat softened cream cheese and butter together until smooth and creamy.
3. Add egg and vanilla: Beat in the egg and vanilla extract until combined.
4. Add cake mix: Gradually mix in the dry cake mix until a thick, sticky dough forms.
5. Add sprinkles: Gently fold in the red and green sprinkles until evenly distributed.
6. Chill dough: Refrigerate for 30–60 minutes to make the dough easier to handle.
7. Shape cookies: Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball generously in powdered sugar.
8. Bake: Place cookies about 2 inches apart on prepared baking sheets. Bake for 10–12 minutes, until the edges are set but the centres still look slightly soft.
9. Cool: Allow cookies to rest on the baking sheet for 5 minutes before transferring to a wire rack.
❤️ Tips for Perfect Gooey Butter Cookies
Don't overbake! The secret to these cookies is keeping the centres soft and gooey.
Use jimmies rather than nonpareils to reduce colour bleeding into the dough.
For extra pretty cookies, add a few sprinkles to the tops before baking.
Chill the dough so the cookies stay thick and don't spread too much.
Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months.
Little holiday tip: You can switch out the red and green sprinkles for any occasion. Pink and red for Valentine's Day, pastels for Easter, or your favourite colours for birthdays!
These are the kind of cookies that look like you spent hours baking, but they're surprisingly easy to make! 🎄❤️
