Beef Patties with Mushroom Herb Sauce & Garlic Potatoes
Ingredients
For the beef patties
500 g ground beef
2 cloves garlic, minced
2 tbsp finely chopped parsley
1 tsp dried oregano
½ tsp ground cumin
Salt and black pepper to taste
1 tbsp olive oil
For the mushroom sauce
1 cup sliced mushrooms
2 tbsp olive oil
2 cloves garlic, minced
½ cup low-sodium beef broth
½ cup plain Greek yogurt
1 tsp paprika
1 tbsp fresh parsley, chopped
For the garlic mashed potatoes
3 large potatoes, peeled and cubed
2 cloves garlic
2 tbsp olive oil
¼ cup Greek yogurt
Salt and pepper to taste
Instructions
Make the potatoes
Boil the potatoes and garlic together in salted water for about 15 minutes until tender. Drain and mash with olive oil, Greek yogurt, salt, and pepper until creamy.
Prepare the patties
In a bowl, mix the ground beef with garlic, parsley, oregano, cumin, salt, and pepper. Form into small thick patties.
Cook the patties
Heat olive oil in a skillet over medium heat. Cook the patties for 4–5 minutes per side until nicely browned and cooked through. Remove and set aside.
Make the mushroom sauce
In the same pan, add olive oil and mushrooms. Cook until soft. Stir in garlic and paprika, then pour in beef broth. Let it simmer for 3–4 minutes.
Finish the sauce
Lower the heat and stir in Greek yogurt and parsley to create a creamy Mediterranean-style mushroom sauce.
Serve
Place mashed potatoes on a plate, add the beef patties on top, and spoon the mushroom sauce over everything.
