Luisa’s Mince Pies

PASTRY
• Flour 00 (500g)
• Corn Flour (100g)
• Unsalted Butter (300g)
• Cold Water (200ml)
• Egg Yolks (x2)
• Castor Sugar (2 tbs)

FILLING
• Mincemeat (800g)
• Orange Juice (1 orange squeezed)
• Apples (x2)
• Brandy (4 tbs)
• Almonds (300g)
• Lemon Zest (1 lemon)

TIPS:
1. Cut the apples in small pieces
2. Keep the filling refrigerated for a couple of days

FILLING
• Onions (x5 large)
• Tuna (1Kg)
• Garlic (x4 cloves)
• Frozen Spinach (250g)
• Peeled Tomatoes (1 can)
• Anchovies (2 cans)
• Olives (200g)
• Capers (4 tbs)
• Fresh Mint

• Beet (Large x4)
• Pickled Onions (x6)
• Capers (3 tbs)
• Ham on the bone (500g)
• Boiled Eggs (x6)
• Bitter Olives (200g)
• Boiled Potatoes (400g)
• Anchovies (3 cans)
• Vinegar (3 dashes)

TIPS
1. Marinate the beet in vinegar (overnight)
2. Add more anchovies, olives or capers to give it a stronger taste
3. Cut the above in small pieces
4. Prepare 24 hours before you serve

• 200g veal
• Maltese sausages x2
• 1 egg
• 1 cup Panko breadcrumbs
• 3/4 cup milk
• 2 tbs Worcestershire sauce
• 3 tbs ketchup
• 1 teaspoon salt
• 1/2 teaspoon ground pepper
