Korean Chicken Pancake
My new favourite way to cook chicken breast! It is savoury, crispy and high-protein meal inspired by Korean Chicken Pancake (Dakjeon)!
Perfect for Meal-Prep so you can reheat for busy weekdays. It is also a quick snack when you feel peckish mid day.
Recipe : Crispy Korean Chicken Pancake (Dakjeon)
Ingredients:
Chicken Pancake
250g Chicken breast or thighs (boneless)
2 stalks Spring onion, sliced
1 pc Red chili, sliced
3 tbsp Potato starch
2 tbsp Water
1 tbsp Crispy Garlic or Grated Raw Garlic
1/2 tbsp Chicken seasoning
Splash of Sesame oil
Salt, black pepper, and white pepper
Dipping Sauce
3 tbsp Soy sauce
2 tbsp Apple cider vinegar
2 stalks Spring onion, sliced
1 tsp Chili oil
1 tsp Honey (optional)

Flourless Waffle With Strawberry Jam & Mixed Berries Jam
Waffles without any flour and still crispy, soft & cheesy? Made possible with this easy recipe.
There are days we just want a waffle treat. Something warm, comforting and delicious with sweet jam and coffee. Sharing below a lowcarb and high in protein waffle we can make at home.
Flourless Waffle Recipe
Ingredients :
3 large eggs
1 cup shredded cheese ( I mix Cheddar & Mozzarella)
1/2 cup almond flour
½ tsp baking powder
Instructions :
•Combine eggs, shredded cheese, almond flour and baking powder
•Preheat waffle maker. Lightly spray with oil so it won’t stick
•Spoon batter into the waffle maker.
•Cooked for 2-3 minutes till no more steam escaping.
•This recipe makes 4 Waffles or 6 small ones.
What I love most about making this waffles?
You can serve it sweet or savoury.
- You can top it with less sugar Strawberry Jam or Mixed Berries Jam from , sides of butter, whipped cream and fresh fruits. Delicious and very satisfying.
- Or made a savoury meal and top it with crispy chicken, eggs, smoked salmon or even sambal bilis for that asian flavour.

Cherry Pie
This is not keto nor it is lowcarb or sugarfree. Our pit stop on the way back from hospital. Tinnitus apparently has no cure and one must live with it. So when life gives you lemon, you eat cherry pie. 😂 🍒

Romancing yourself

Recently, I had dinner with my best friend, and somewhere between laughter and good food, it hit me…we spend so much of our lives waiting. Waiting for someone to buy us flowers. Waiting for someone to plan the dinner. Waiting for someone to celebrate us.
But why wait?
If no one gives you flowers — you buy them yourself.
If no one wines and dines you — you take yourself out.
If no one celebrates you — you become your own celebration.
Self-love isn’t a backup plan. It’s the main event.
There is something deeply powerful about choosing yourself. NOT out of loneliness, but out of ‘I Am Enough. Dressing up just because you feel like it. Ordering that beautiful meal. Buying that ring without needing a reason.
Because you are the occasion.
And let me just say this… to all the men out there - any woman who says she doesn’t want flowers… is probably lying 😄
Romance is not dead. We just need to stop outsourcing it.

A girl Trip, A Food Trail at Kota Bahru. 2 Days Not Enough
Over the weekend, my girlfriends and i went for a girl’s trip to Kota Bahru. I’ve always believed the best way to understand food is to taste it where it comes from.
No husband, no kids. We didn’t hold back.
From walking through batik factories to exploring the vibrant gold scene (yes, the prices here are seriously unbeatable compared to KL), every stop had a story. But let’s talk about the food, because that’s where the real magic is.
My Top Food Pick :
Lieniey Nasi Kerabu Tumis
Nasi kerabu - elevated with Kerabu Sare (Seaweed) it is fresh, crunchy smothered in rich, slightly smoky percik gravy.
Nasi Pulut Pagi - this one surprised me. Soft, slightly sweet glutinous rice, balanced with salty coconut shavings. Simple. Comforting.
Warung Acu Tera
Fresh seafood, lightly battered and fried—crisp on the outside, naturally sweet inside. No need for heavy sauces when the ingredients are this good. I do hope that they improve on parking and seating.
Suwarin Baan
The Thai food here blew us away. Authentic, bold, beautifully presented. Every dish rated 8-9, even the humble vegetable dish. Hope they improve on table turnaround time and service speed.
This trip reminded me of something I always share with everyone:
👉 Healthy eating isn’t about restriction, it’s about understanding ingredients, balance, and enjoying food.
Two nights in Kota Bahru? Not enough.
Because places like this deserve to be experienced slowly.

Lunch at Jibby East Grill
Feeling Hajj blues reading friends and family members leaving for Hajj this year. We did Hajj/pilgrimage last year and our hearts are still very much attached to Makkah.
Alhamdulillah we gather on Thursday to celebrate my birthday this week. Happy and grateful for kind sisters and for the ukhwah we nurture. They were my companion during pilgrimage in Aziziyah, Makkah & Madinah. Thru the good & hard times, sick and health. The most relax and chill group…. Who says making friend in adulthood hard. ?

Birthday & Motherhood
Turning 54 tomorrow.
Having an early birthday lunch, just the three of us. No big plans, just good food and catching up.
Your eldest child is the one who teaches you how to be a parent. Ours left home for university and after working, he’s still choosing to live independently. Not the easiest path, but his path. And as parents, we learn to respect that.
Over lunch, we listened more than we spoke. His work stories, routines, expectations, aspirations, even the challenges. These are the moments that matter. Along the way, we share our wisdom but we also learn to step back.
Because raising children is not about holding on forever. It’s about preparing them to stand on their own.
I’m turning 54 tomorrow. I’m praying for health, time, and the chance to see my children truly thrive. Living a life that is meaningful, grounded, and worth living.
And above all, I trust that Allah is the best planner.
