Freshly blended. Freshly cooked. Absolutely delicious 😍

Today's black soup started with a fresh blend of oziza leaves, scent leaves, curry leaves, and oziza seeds with some pre-cooked proteins, smoked fish, crayfish powder, blended chilli pepper, and seasoning.

After a good stir, I covered the pot and let everything cook until the flavours came together perfectly.

The aroma alone was enough to make everyone impatient. 😋 Best enjoyed with starch or soft pounded yam.

Who says ogbono soup has to be made the usual way?

This time, I tried something different. I sautéed onions in palm oil, fried the ogbono before adding my stock, other ingredients and finished everything off with freshly washed bitter leaf.

The result? Absolutely delicious 😍 the flavour was richer, the aroma was amazing, and the bitter leaf gave it the perfect finish. Safe to say, this method has earned a permanent spot in my kitchen.

You don't have to wait for a party before enjoying party-style jollof rice.

One of my biggest kitchen hacks is always having a few essentials ready in the freezer.

For this pot of fresh jollof rice, I simply used my homemade jollof base and meat stock from my freezer with a few other ingredients to give me the perfect party style jollof rice.

For protein, I already had some airfried meat in the freezer as well. I added it towards the end of cooking to warm it through, so there was no need to fry meat all over again.

This step-by-step shows how a little planning can save you time while still giving you that rich, smoky, party-style jollof we all love.

Meal Prep for the Week.

One thing that makes my week in the kitchen easier is prepping my proteins ahead of time.

This week, it's ram meat. Because ram meat has a good amount of fat, I like to air-fry it after boiling to render out some of the excess fat before cooking. It gives me cleaner meat without losing the rich flavour.

I cooked it simply with Onions, Rosemary, Bay leaves and Seasoning.

I don't add curry powder because I also use the meat stock for soups, and I prefer my soups to have their natural flavour instead of tasting like curry.
