Smoky Nigerian Jollof Rice Recipe
1. Blend the base: Blend tomatoes, red bell peppers, onions, and scotch bonnet peppers into a smooth mix. Boil to reduce excess water.
2. Prepare the stew: In hot oil, sauté sliced onions, then add tomato paste and fry until deep red. Add the boiled pepper mix and cook until the oil floats to the top and the sauce thickens.
3. Season: Add seasonings like thyme, curry powder, bouillon cubes, salt, and bay leaves.
4. Add rice: Pour in washed parboiled long-grain rice and mix well with the sauce.
5. Cook with stock: Add meat or chicken stock, cover with foil and lid to trap steam. Cook on low heat until rice is done, stirring minimally.
6. Get smoky flavor: Let the bottom slightly burn (not too much!) to create the signature smoky taste.
7. Finish & serve: Fluff rice gently and serve with fried plantains, salad.
