Flowers only last a short time🥀 Gummy bears are a fun, easy way to hold on to fleeting foraged flavors (and make a great gift)🧸💜

Alex’s Gummy Bear Recipe:
1/2 cup ≈ 120g syrup (or juice)
1 Tbsp ≈ 20g honey (or jelly)
2 Tbsp ≈ 20g gelatin powder (or agar agar)

small saucepan
dropper
silicon molds (recipe makes around 120 bears)

· combine ingredients, simmer on low heat until dissolved (10-15min)
· sq**rt with dropper into molds (20min) *I spray the molds first, for easier removal & clean-up
· set in fridge (30min)

You can enjoy them without coating or dust them with a little cornstarch & vanilla sugar (1:1) or citric acid & sugar (1:3) and sit out on parchment paper a few hours

🌿We’ve become so used to ingredients simply "appearing" in the store that it’s easy to forget where they come from, whether it’s the farm, the garden, or the sea. For me, food becomes more meaningful when the flavor/aroma/decoration represents the ingredient’s journey

I recently used this lilac syrup in the flower-shaped lilac+violet cake and 🔜 lilac gummy bears💜

Homemade lilac syrup is simple to make: infuse flowers in hot water overnight; strain; add equal amount of sugar to the liquid, heat until dissolved

This might be the healthiest cake I’ve ever made! (not that that’s saying much😂)

Stinging nettles give this cake a fresh green color, plus vitamins, minerals, and antioxidants💚 But then I covered all that nutrition in white chocolate ganache (my favorite part🤍), toasted pistachios, and a blackberry compote🤤

More proof that “weeds” can be elegant desserts🎂✨
