The ultimate pani popo fusion ๐ฅฎ๐ฅฅ๐คค๐ฅ
Mix together in a small bowl 2 tsp active yeast or 1 pre packed packet of yeast with 1 tsp of sugar &
3 tablespoons Warm water
In a large bowl add in 1 cup coconut Milk (put the rest aside) 50g butter
1/2 cup sugar and then melt in microwave for 1min
Add 1 large egg
1/4 cup powdered milk, Mix. Add in activated yeast mixture. Add in 5 cups of plain flour, make sure dough isnt sticky. Knead for 10-15mins.
Cover for 1-2 hours or until dble in size
Punch out air and flatten dough out and then roll out.
Roll together tightly for plain pani popo add nothing
For cinnamon add softened butter, cinnamon, brown soft sugar
For biscoff add in melted biscoff and crushed biscoff biscuit.
Cut into 2cm pieces. And place into oven dishes leaving gaps between as they well expand more. Let rest for a further 20mins.
Pour in coconut cream mixture (coconut cream, sugar, I used the rest of coconut milk plus 2 cans of coconut cream and left some aside to add at end)
Pre heat oven to 170C on fan bake. Bake for 25ish mins or until golden. I always add extra coconut cream on the last 2-4 mins of baking.
Let rest for at least 10mins before serving.
For biscoff pour over more melted biscoff
For cinnamon pour over cream cheese frosting.
Half tub cream cheese, with 1 Tbs of softened butter mixed then added 1-2 cups of icing sugar and 2 Tbs of milk.
