Homemade Sriracha Sauce
Ingredients:
- 1 pound (about 16-20) red jalapeƱo peppers, stems removed
- 4 cloves garlic
- 1/2 cup distilled white vinegar
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1 tablespoon fish sauce (optional)
Instructions:
1. Wear gloves when handling the jalapeƱo peppers to protect your skin and eyes from the heat.
2. Rinse the jalapeƱo peppers and remove the stems. If you prefer a milder sauce, you can also remove the seeds and membranes for less heat.
3. Place the peppers, garlic cloves, distilled white vinegar, granulated sugar, salt, and fish sauce (if using) in a blender or food processor.
4. Blend the ingredients until you achieve a smooth and uniform mixture. If the sauce is too thick, you can add a little more vinegar to reach your desired consistency.
5. Transfer the mixture to a saucepan and bring it to a boil over medium-high heat.
6. Reduce the heat to low and simmer for 5-10 minutes, stirring occasionally.
7. Remove the saucepan from heat and let the mixture cool to room temperature.
8. Once cooled, taste the Sriracha sauce and adjust the seasoning as needed. You can add more sugar, salt, or vinegar to achieve the desired balance of sweet, salty, and tangy flavors.
9. Use a funnel to pour the Sriracha sauce into clean, sterilized bottles or jars. Seal them tightly.
10. Store the homemade Sriracha sauce in the refrigerator for up to 6 months. The flavors will continue to develop over time.
