Next up on my pickle list is one of my favourites! And I’m so proud to say I grew all the cucumbers for this batch 🤩
Bread & butter pickles ✨
500grams of cucumber sliced thinly
1 onion sliced thinly
1 tbsp Celtic sea salt
1 cup apple cider vinegar
1 cup of sugar
1 tsp tumeric
1 tsp coriander seeds
2 tsp yellow mustard seeds
Add your sliced cucumbers and onions to a bowl and sprinkle with your salt. Give them a quick massage then cover and into the fridge for an hour.
In a preserving pan add your apple cider vinegar, sugar and the spices. Keep stirring until the sugar dissolves and then simmer for a few minutes.
Strain the liquid that has come off the cucumbers and add into the pan. Remove from the heat and let them sit for 5 minutes.
Have your warm jars ready, add in your cucumbers and liquid and let them sit to seal.
Once they have cooled down pop them in the fridge and enjoy ✨
