Recipe: Stir-Fried Chicken Noodles 🍜🍗

Preparation time: 30 minutes
Cooking time: 15 minutes
Servings: 2

Ingredients:
- 250g boneless chicken, cut into thin 2-inch strips 🍗
- 150g noodles (enough for 2 people) 🍜

Marinade for Chicken:
- 1/2 tsp salt 🧂
- 1/2 tsp powdered white pepper 🌶️
- 1 tsp soy sauce 🥄
- 1 tsp vinegar 🥄
- 1 tsp honey 🍯
- 2-3 cloves garlic, grated 🧄

Vegetables:
- 1.5 cups broccoli florets (about 100g) 🥦
- 1.5 cups julienned carrots (about 75g) 🥕
- 1.5 cups julienned red bell pepper (about 75g) 🌶️
- 2 tbsp chopped white part of spring onions (about 3 spring onions) 🧅
- 3 green parts of spring onions, roughly chopped (for garnish) 🧅

Other Ingredients:
- 2 tsp minced garlic 🧄
- 1 tsp minced ginger 🧅
- 2 tbsp refined oil 🥄
- 1/4 tsp salt for seasoning (or to taste) 🧂
- 1/4 tsp powdered white pepper for seasoning (or to taste) 🌶️

Sauces:
- 2 tsp dark soy sauce 🥄
- 2 tsp oyster sauce 🥄
- 3 tsp red chili sauce 🌶️

Preparation:

1. Cut the boneless chicken into thin 2-inch strips.
2. Marinate the chicken strips with the specified marinade ingredients. Mix well and let it rest for about 20-30 minutes.
3. To boil the noodles, follow the instructions on the package.
OR
For 150g of noodles, heat 1.5 liters of water in a pot over high heat until boiling.
Add the noodles and stir them lightly to separate.
Boil them for 2-3 minutes, ensuring they are not too soft but "al dente."
Drain them in a colander and rinse with cold water to stop the cooking process.
Add 1 tsp of oil and mix well to coat the boiled noodles and prevent sticking. Set aside.

Cooking:

1. Heat 1.5 tbsp of oil in a wok.
2. Add the marinated chicken and stir-fry over high heat for about 4 minutes until the chicken pieces are golden brown. Remove from the oil and set aside.
3. Add 1/2 tbsp of oil to the same wok and heat it.
4. Now, add the minced garlic and ginger and stir-fry over medium heat for 15 seconds.
5. Add the chopped white part of spring onions and stir-fry over medium heat for another 15 seconds.
6. Next, add the julienned carrots and broccoli florets. Mix well and season with a pinch of salt and powdered white pepper. Stir-fry over high heat for 1 minute.
7. Add the julienned red bell pepper to the wok and continue stir-frying for another minute.
8. Add the cooked chicken back to the wok and mix well with the vegetables.
9. In a small bowl, combine the dark soy sauce, oyster sauce, and red chili sauce. Pour this sauce mixture over the chicken and vegetables. Stir-fry everything together for another minute, ensuring the chicken and vegetables are well coated with the sauce.
10. Finally, add the boiled noodles to the wok and gently toss everything together until the noodles are heated through and well combined with the chicken and vegetables.
11. Garnish with the chopped green parts of spring onions.
12. Serve hot and enjoy your delicious stir-fried chicken noodles! 🍜🍗

Note: Adjust the seasoning and sauces according to your taste preference.
