🍫Chocolate Self-Saucing Pudding🍫

It's clear from how popular our Caramel Apple Self-Saucing Pudding was that you guys love a good old self-saucing pudding recipe in winter!

This one is a classic for a reason! This deliciously rich, silky pudding creates its own sauce in the baking dish. It's a no-fail, super easy recipe, guaranteed to be devoured by your family and friends.

Just a few simple pantry ingredients:
🍫self-raising flour
🍫cocoa powder
🍫brown sugar
🍫butter
🍫milk
🍫egg
🍫vanilla

Best served with a big dollop of whipped cream!

🍋‍🟩🥥Zesty Macaroons🥥🍋‍🟩

These coconut, lime and chocolate macaroons are delicious and definitely don't taste like the should be so good for you! Refined sugar free and high in healthy fats, these are a guilt-free treat!

Perfect to have stored in the fridge for when you need a little treat. You can swap the lime zest for any citrus zest or use freeze-dried fruit such as raspberries or strawberries.

Ingredients:
Macaroons
🍋‍🟩2 cups shredded coconut
🥥1/2 cup ground almonds
🍋‍🟩1/4 cup coconut oil, melted
🥥1/3 cup maple syrup
🍋‍🟩zest of 2 limes
🥥1/2 tsp vanilla extract
🍋‍🟩2-3 tsp cold water

Chocolate Dip (optional)
🥥100g dark chocolate, melted
🍋‍🟩1/2 tsp coconut oil, melted
pinch of salt

Method:
- Mix the macaroon ingredients until well combined.
- Form into balls using wet hands, and place onto a tray lined with baking paper.
- Refrigerate for 30 minutes to set.
- Remove from the fridge and drizzle over or dip into the melted chocolate mix.
- Place back into the fridge and allow to set for 12 hours.
- Keep in the fridge for up to a week. Serve chilled.

Makes: 12-14
Prep Time: 10 minutes
Cooking Time: 0 minutes

🍫Chocolate Weet-Bix Slice 🍫

This is one of those recipes that I used to make "for the children" but still seem to be making it...even though they've all left home!

This classic recipe has definitely stood the test of time for good reason! Crunchy and chocolatey, it's great as not only a lunchbox filler but also makes the perfectly easy (and cheap) plate for a shared morning tea. And if you don't have time to ice, then don't worry - it's still delicious!

Just a few simple ingredients:

🍏Caramel Apple Self-Saucing Pudding🍎

I don't know if this is a thing in other families, but in ours we used to have the odd 'pudding dinner' during winter! It was perfect on those nights when a) you wanted something easy and b) you wanted something comforting. This dessert would make the perfect pudding dinner!

It's also the perfect dessert when you have family coming over for dinner, or when you want a little comfort for yourself! It's so easy to whip up and always goes down a treat.

Ingredients:
Cake
🍎2 apples, peeled and finely sliced
🍏1 cup self-raising flour
🍎3/4 cup white sugar
🍏1/2 cup milk
🍎1 egg
🍏1 tsp vanilla extract
🍎60g (2oz) butter

Sauce
🍏1 1/2 cups boiling water
🍎3 tbsp golden syrup

Method:
- Preheat oven to 180°C (350°F) and grease a 1.5 litre (6 cup) capacity ovenproof dish.
- Place the apples, flour, sugar, milk, egg and vanilla extract in a bowl and mix.
- Spoon the mixture into the prepared dish.
- Cut the butter into chunks and scatter over the top of the mixture.
- Dissolve the golden syrup in the boiling water and gently pour over the top.
- Bake for 30-40 minutes until golden and bubbling.
- Allow to rest for at least 10 minutes before serving to allow time for the sauce to thicken slightly.

Serves: 4
Prep Time: 10 minutes
Cooking Time: 30-40 minutes

Serve warm with ice cream and watch it disappear!

As delicious as it is simple!

This recipe is an old favourite and easily made by throwing all the ingredients together in one bowl! The result is a light, buttery citrus cake.

The oranges can be replaced for any other type of citrus; lemon and lime are equally delicious and make the most of those laden trees at the moment!

Just a few simple ingredients:

🎂The Starship Foundation Big Bake Off 🎂

Late last year, my family got a wee taster of what it meant to have a sick child. And even though everything turned out fine, for a while there, the world stopped and we were terrified.

One take away for me, (other than how truly blessed I feel for my cool fam!) was how incredible resources like Starship Hospital are for kiwi children and their families.

It's time to give back and raise a little bit of money to help out!

Starship cares for more than 150,000 children and young people each year and fundraising enables the purchase of cutting-edge medical technology and specialist equipment which improves
diagnosis, treatment and recovery outcomes for young patients.

So....during June we'll have a wee bit of a baking focus, which you guys love! 🎂 And every time I share a recipe, if you share a photo of your creations, I'll be sending out wee spot prizes throughout the month to lucky winners...as well as a wee donation to Starship of course! 🎂

Last of the Autumn road trips around the beautiful Coromandel with a brekkie stop at the Little Blue Kitchen in Hahei!

Will definitely be cooking up Linda’s Corned Beef recipe this week (Volume 2, page 61) so we can recreate this delicious Reuben Sandwich at home.
