Fresh Lumpia (Homemade)
**Ingredients:**
**Filling:**
- 1 ½ cups shredded chicken breast
- ½ cup chopped green beans
- ½ cup diced carrots
- 1 cup diced sweet potato
- 1 cup diced turnips or jicama
- 2 cups shredded cabbage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- ½ cup water
- 1-2 tbsp fish sauce (adjust to taste)
- 1-2 tsp seasoning granules (adjust to taste)
- 1 tbsp oil
- Salt and pepper to taste
**Sauce:**
- 2 cups water
- ½ cup brown sugar
- ¼ cup cornstarch
- 2 tbsp soy sauce
- 3 cloves garlic, minced
**Wrapper:**
- 1 cup all-purpose flour
- ¼ cup cornstarch
- 1 cup water
- 2 tbsp oil
- 2 eggs
- Pinch of salt
- Drop of egg yolk color (optional)
**Garnishing:**
- Toasted crushed peanuts
- Romaine lettuce leaves
**Instructions:**
1. **Prepare the Filling:**
- Heat 1 tbsp oil in a pan. Fry 3 cloves of minced garlic until toasted brown. Remove from pan and set aside.
- In the same pan, add a bit more oil if needed, and sauté 1 chopped onion until translucent. Add the shredded chicken breast and cook until browned.
- Season with fish sauce and pepper. Stir for 1 minute.
- Add the diced carrots and cook for 2 minutes. Then add the diced sweet potato and cook for 1 minute. Follow with green beans and cook for another minute.
- Pour in ½ cup water, seasoning granules, and salt to taste. Stir and bring to a simmer.
- Add the diced turnips (or jicama) and shredded cabbage. Stir and cook for another minute. Remove from heat and let cool.
2. **Prepare the Sauce:**
- In a saucepan, combine 2 cups water, ½ cup brown sugar, 3 minced garlic cloves, and ¼ cup cornstarch. Mix well until the cornstarch is dissolved.
- Heat over medium heat, stirring continuously until the mixture thickens.
- Add 2 tbsp soy sauce and stir. Adjust seasoning if needed.
3. **Prepare the Wrapper:**
- In a bowl, beat 2 eggs. Add 1 cup water, 2 tbsp oil, a pinch of salt, and a drop of egg yolk color if using.
- Gradually add 1 cup flour and ¼ cup cornstarch, mixing until smooth. Strain the batter to remove lumps.
- Heat a non-stick pan and lightly grease with oil. Pour ¼ cup of batter into the pan and swirl to spread it evenly. Cook until the bottom is set, then flip and cook the other side. Repeat until all batter is used.
4. **Assemble the Lumpia:**
- Place a wrapper on a flat surface. Spoon some of the filling onto the wrapper and roll it up tightly.
- Place the rolled lumpia on a serving plate. Drizzle with the prepared sauce and garnish with toasted crushed peanuts and romaine lettuce leaves.
