BEEF BIHARI BOTI:πŸ₯©πŸ₯©β˜˜οΈβ˜˜οΈ

TO PREPARE BIHARI MASALA:

2 tbsp chana
2 tsp poppy seeds
2 tsp coriander seeds
2 tsp cumin seeds
1 stick cinnamon
4 cloves
15 black peppercorns
4 green cardamom
1 black cardamom
1/4 tsp nutmeg
1 small stick mace
1 Kashmiri red chili, cut into pieces

METHOD:

On a tawa, dry roast all the ingredients lightly. In a grinder, add all the ingredients and make a powder.

OTHER INGREDIENTS:

2 kg boneless beef pieces
3 tsp salt, or to taste
3 tbsp papaya paste
3 tbsp onion paste
3 tbsp yogurt
3 tbsp ginger garlic paste
1 tbsp green chili paste
1 tbsp chili powder
1 tbsp lemon juice
1/3 cup mustard oil + extra for brushing

METHOD:

In a large bowl, add beef pieces, salt, papaya paste, onion paste, yogurt, ginger garlic paste, green chili paste, chili powder, lemon juice, mustard oil, and the prepared Bihari masala. Mix all ingredients very well, cover, and refrigerate overnight.
Thread the marinated beef onto skewers and place the skewers on burning charcoal. Turn the skewers often so that they don't burn. Brush with mustard oil when done. Serve hot with paratha chutney, yogurt, and salad. Enjoy!

TO PREPARE CHEESECAKE MIXTURE:

200 ml Olper's cream, chilled
1 can sweetened condensed milk, chilled
100 grams Philadelphia cream cheese
1/4 tsp vanilla essence

METHOD:

In a bowl, add cream, cream cheese, sweetened condensed milk, and vanilla essence. Beat until light and fluffy.

OTHER INGREDIENTS:

1 can (432 grams) mixed fruit
1 can (432 grams) nata de coco
1 can (432 grams) pineapple chunks
1 1/2 cups strawberries, cubed
2 medium apples, peeled and cubed
1 1/2 cups raw coconut, grated
1/2 cup raisins
1/2 cup walnuts
1/2 cup glacΓ© cherries

METHOD:

In a large bowl, add all the ingredients and mix them. Add the cream cheese mixture and mix together to evenly coat all of the fruits. Refrigerate for two hours. Enjoy!

TO PREPARE KABAB:

500 grams beef mince
1 tsp salt
1 tsp chili flakes
1 tsp cumin powder
1 tsp chili powder
2 tsp ginger garlic paste
1/2 tsp garam masala powder
1/2 tsp turmeric powder
2 tbsp roasted gram flour
1 tbsp lemon juice
1 tsp yogurt
1/4 tsp carom seeds, lightly crushed
1 bread slice, soaked and squeezed
1 medium onion, chopped
1/4 cup chopped coriander leaves
10 mint leaves
1 tbsp chopped green chilies
1/4 cup oil for frying

METHOD:

Marinate beef mince with salt, chili flakes, cumin powder, chili powder, ginger garlic paste, garam masala powder, turmeric powder, gram flour, lemon juice, yogurt, carom seeds, bread slice, onion, coriander leaves, mint leaves, and green chilies. Cover and leave for two hours. Make round-shaped small kababs. In a large nonstick tawa, heat oil and fry the kababs until golden brown on both sides. Transfer to a platter.

TO PREPARE MASALA:

1/3 cup oil
1 medium onion, finely chopped
1 tsp cumin seeds
2 tsp crushed garlic
4 big tomatoes, blanched, peeled, chopped
1 tsp salt
1 tsp green chili paste
1/2 tsp chili flakes
1/4 tsp black pepper powder
4 green chilies, chopped
2 tbsp chopped coriander leaves
1 tbsp julienned ginger

METHOD:

In the same tawa, heat oil and fry onion till light pink. Add cumin seeds garlic, fry, then and add tomatoes, salt, chili flakes, and green chili paste. Cook 3 to 4 minutes. Place in fried kababs, black pepper, cover, and cook on low flame for 5 to 6 minutes. Then add ginger, green chilies, and chopped coriander leaves. Transfer to a platter and serve with naan and salad. Enjoy!

MAPLE WALNUT ICE CREAM:🍨🍨🍦🍦🍨🍨

INGREDIENTS:

14 oz can sweetened condensed milk (chilled)
1/8 tsp salt
1 cup chopped walnuts
2 tbsp Maple syrup
500 ml all-purpose cream, chilled
2 tbsp icing sugar

METHOD:

In a chilled bowl, add cream and beat until stiff peaks form. Add icing sugar one at a time and beat until very thick.
In another chilled bowl, add sweetened condensed milk, salt, and Maple syrup. Beat until just combined. Now add cream and beat at very low speed until just combined. Then fold in chopped walnuts.
Pour into a freezer-safe container and freeze for 6 to 7 hours or overnight. Enjoy!

STEP ONE:

1 kg boneless mutton pieces
4 cups water
1/2 cup vinegar
1 tsp salt

METHOD:

In a bowl, mix together water, vinegar, and salt. Place the mutton pieces and mix. Cover and leave for 40 minutes. Remove from the water and pat dry.

OTHER INGREDIENTS:πŸ₯£πŸ₯£

1/2 cup hung curd
1 1/2 tbsp ginger garlic paste
1 tbsp papaya paste
1 tbsp green chili paste
2 tbsp lemon juice
1 1/2 tsp salt or to taste
1 tsp cumin powder
1 tsp coriander powder
1 tsp chili flakes
1 tsp chili powder
1 tsp garam masala powder
1 tsp chaat masala
3/4 tsp turmeric powder
1/3 cup sarsoon oil
Pinch of yellow food color

METHOD:

In a large bowl, add all the ingredients and mutton pieces. Mix it well, cover, and leave for 2 hours.
Thread the marinated meat onto skewers and place the skewers on burning charcoal. Cook from all sides until golden and tender. Serve with chutney, salad, and naan. Enjoy!

1 tbsp butter
1 tsp olive oil
1 tsp crushed garlic
1/2 tsp paprika powder
1/2 tsp chili flakes
1/4 tsp salt
1/4 tsp black pepper powder
1 tbsp lemon and herb peri peri sauce
1 tbsp medium peri peri sauce
1/4 cup chicken stock
100 grams grated cheddar cheese
200 ml Olper's cream

METHOD:

In a saucepan, heat oil and butter. Add garlic and fry for a few seconds. Now add all the remaining ingredients and cook until creamy.

MARINATE THE CHICKEN:πŸ—πŸ—πŸŸπŸŸ

4 boneless chicken thighs
2 tbsp lemon juice
1 tbsp crushed garlic
1 tsp level black pepper powder
1 tsp smoked paprika
1 tsp salt or to taste

1 tbsp olive oil
1 tbsp butter
1 tsp chopped parsley for garnishing

METHOD:

Marinate chicken with lemon juice, crushed garlic, black pepper powder, smoked paprika, salt, lemon and herb peri peri sauce, and mixed herbs. Cover and refrigerate for 3 to 4 hours.
In a nonstick grill pan, heat butter and oil. Place the marinated chicken and grill both sides until golden brown and cooked through. Transfer to a platter, pour over the creamy sauce, and garnish with chopped parsley. serve with French fries. Enjoy!

INGREDIENTS:

500 grams potatoes (cut into thick lengthwise pieces)
2 medium-sized eggplants (cut into thick lengthwise pieces)
3/4 cup oil
2 tbsp finely chopped onion
4 large garlic cloves, cut into strips
4 medium tomatoes, cut into halves
4 green chilies, cut into halves
1 tsp salt
1 tsp roasted chili flakes
1/2 tsp roasted cumin powder
1/4 tsp turmeric powder
2 green chilies, chopped
2 tbsp chopped coriander leaves

METHOD:

In a large nonstick pan, heat oil and fry potatoes until golden and tender. Transfer to a bowl.
In the same oil, add eggplant and fry until golden and tender. Transfer to a bowl.
In the same pan, add tomatoes, garlic, onion, and green chilies. Cover and cook on medium flame for two minutes. Then discard tomato skins and mash all the ingredients very well.
Add salt, chili flakes, cumin powder, and turmeric powder. Cook for two minutes, then pour in 1/2 cup water, fried potatoes, and eggplant. Cover and cook on low flame for 15 minutes. Lastly, add chopped coriander leaves and green chilies. Transfer to a platter and serve with roti, salad, and yogurt. Enjoy!

TO PREPARE SAGO (TAPIOCA PEARLS)

1 1/2 cups tapioca pearls (soaked in water for 30 minutes and drained)
Bring 10 cups of water to a boil and stir in tapioca pearls. Cook on medium flame until they turn translucent. Once done, drain the tapioca pearls, refresh them with cold water, and set them aside.

COCONUT PUDDING LAYER:πŸ₯₯

200 ml Olper's cream, chilled
3 tbsp icing sugar
3/4 cup sweetened condensed milk
2 pinches of salt
1/2 tsp coconut essence
50 grams sachet coconut cream milk powder
1/2 cup grated raw coconut
Half of the prepared tapioca pearls

METHOD:

In a chilled bowl, add cream and beat until stiff peaks form. Add icing sugar 1 tbsp at a time and beat well. Then add sweetened condensed milk, salt, coconut cream milk powder, and coconut essence. Beat until just combined. Lastly, fold in grated coconut and tapioca pearls.

200 ml Olper's cream, chilled
3 tbsp icing sugar
3/4 cup sweetened condensed milk

2 cups chopped strawberries
Half of the remaining tapioca pearls

METHOD:

In a chilled bowl, add cream and beat until stiff peaks form. Add icing sugar 1 tbsp at a time and beat well. Add sweetened condensed milk and strawberry purΓ©e and beat until just combined. Fold in chopped strawberries and tapioca pearls.

TOPPINGS:

2 cups fresh strawberries
2 cups nata de coco
Mint leaves as required

TO PREPARE BURGER SAUCE:

1/2 cup mayonnaise
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika powder
1/4 tsp mustard paste
1/4 tsp caster sugar
1 tbsp ketchup
1 tbsp vinegar
1 tbsp cream

In a bowl, add all the ingredients and mix them well.

TO PREPARE BURGER PATTIES:

300 grams boneless chicken
1/2 tsp salt or to taste
1/2 tsp paprika powder
1/2 tsp garlic powder
1/2 tsp mustard paste
1/4 tsp black pepper powder
1/4 tsp white pepper powder
1 tsp mayonnaise

METHOD:

In a food processor, add all the ingredients and process till a smooth mixture forms. Divide into three equal portions and make patties. Keep in the freezer for one hour. Then coat with all-purpose flour, dip in batter, then fry until golden and crispy.

BATTER:

1/2 cup all-purpose flour
1/2 tsp chicken powder
1/2 tsp garlic powder
1/2 tsp baking powder
1 tbsp corn flour
1/4 tsp black pepper powder
1/4 tsp salt
1/2 cup ice water

In a bowl, add all the ingredients and mix them well.

OTHER INGREDIENTS:

3 burger buns, split each and lightly toasted
3 cheese slices
1 tomato, sliced
Half cucumber, sliced

TO PREPARE THE HUMMUS:

200 grams boiled chickpeas, skin removed
1/2 tsp salt, or to taste
1/2 tsp cumin powder
1/2 tsp white pepper powder
1/4 cup extra virgin olive oil
1/3 cup lemon juice
1/4 cup tahini paste
1 tsp garlic powder
4 large ice cubes

METHOD:

In a food processor, add chickpeas, salt, cumin powder, white pepper powder, olive oil, lemon juice, tahini paste, garlic powder, and ice cubes. Process until a smooth paste forms. Refrigerate for 2 hours. Then, transfer to a large platter, arrange the toppings over it, and drizzle with olive oil. Serve with toasted pita bread. Enjoy!
