Ingredients for Marination

Chicken 500gms
Ginger garlic paste 1tbsp
Salt 1/2tsp
Vinegar 2tbsp
Soy sauce 2tbsp

MAYO-ERI Sauce

Mayonaise 6tbsp
Peri Peri sauce 3tbsp
Spring onions 1tbsp
Crushed garlic 1tsp

Kaleeji Masala FRY

Tips for beginners- never cook kaleeji for morethan 20mins the maximum time to cook kaleeji is 15-20mins not more than that , the more you cook it will get harder and chewy.
- always add salt towards last
- don't cover it while cooking
- always cook on medium flame not to low not to High.
- never add water while cooking kaleeji, it will release its own water to cook itself.

Method

Heat oil add 1 small chopped onion and fry till light golden add 2 large tomatoes cook for 5 mins , add cleaned and washed kaleeji mix with other organs (optional) 500gms
Fry it for 3-4mins.
Keep the flame medium high add tikka masala of any brand 1tbsp, turmeric powder 1/2tsp, roasted and crushed cumin and red chilli flakes 1tbsp ,fry for 2mijs now add 1/2cup Yogurt and let it cook for 6-8mins .. when the masala done add roasted and crushed cumin and corriandar seeds 1tsp, qasoori methi 1tbsp, lemon juice 2tbsp, salt to taste fresh green chillies, ginger and corriandar leaves to garnish..

Masala kaleeji ready.. please remember don't over cook your kaleeji it will get hard and chewy..

Paratha dough for 6 parathas

Fine Aata 2 cups
Sugar 1tsp
Salt 1/2tsp
Oil 2tbsp
Milk+water 1:1 to knead the dough .

Chicken marination

1kg Chicken boneless
Ginger garlic paste 2tbsp
Baking soda 1/4tsp
Red crushed chilli flakes 1tsp
Black pepper 1/2tsp
White pepper 1/2tsp
Garlic powder 1tbsp
Chicken powder 1tsp
Salt to taste
Soy sauce 2tbsp
Vinegar 2tbsp
Water 1 glass
Hot sauce 1tbsp

Marinate overnight or atleast 4-6 hours.

Dry Batter

2cups all Purpose Flour
1cup Corn flour
1tsp Baking powder
1tsp Garlic powder
1tsp Chicken powder

Cocktail Sauce

Mayonaise 4tbsp
Ketchup 1tbsp
Hot sauce 1tsp
Garlic powder 1tsp
Vinegar Pickle 1tbsp
Thyme 1/4 tsp
Mustard sauce 1/2tsp
Milk 1tbsp

Afghani Sauce for 12 dumplings

Heat oil with 1 tsp butter sautee 1 tsp garlic and 1tbsp Green chillies, add 1 cup milk , 1/2 cup Cream, 1/2tsp Cumin powder, 1/2tsp Garlic powder, 1/2tsp chicken powder , 1/4tsp Red crushed chilli, 1/8tsp Black pepper
Cook for 2mins add your dumplings toss and mix and enjoy.

Ingredients for Marination

Chicken 1kg
Ginger garlic paste 2tbsp
Green chilli paste 4tbsp
Salt 1tbsp
Turmeric powder 1tsp
Cumin powder 1tbsp
Yogurt 1cup
Tomatoes 2 large
Fried onions of 2 medium sized
Bay leaf 1
Star anise 2
Cinamon stick 1
Jaifal jawatri illaichi powder 1/4tsp
Kari leaves 12
Aalu bukhara 10
Chinese salt 1/2tsp
Fresh mint corriandar 2tbsp each

Oil 1/4 cup to cook.

Basmati rice 500gms
Ghee 2tbsp for layering
Kewra water 1tsp
Saffron in milk 1tsp
Zarda food colour

Dum time - 15mins.
