Ingredients:
Boiled potatoes β 2 cups (mashed)
Onion β 2 tbsp (finely chopped)
Green chili β 1 (finely chopped, optional)
Cheese β ΒΌ cup (grated, optional)
Red chili powder β Β½ tsp
Cumin seeds β ΒΌ tsp
Salt β to taste
Fresh coriander β 1 tbsp (finely chopped, optional)
Cornstarch or all-purpose flour β 1-2 tbsp (for binding)
Oil β for shallow frying
Method:
Prepare the mixture:
In a large bowl, combine mashed potatoes, chopped onion, green chili, cheese, red chili powder, cumin seeds, salt, and coriander.
Mix well.
Add cornstarch or flour to help bind the mixture so the tikkis donβt break while frying.
Shape the tikkis:
Take small portions of the mixture and roll into balls, then flatten them gently into patty shapes.
Heat oil:
In a pan, heat enough oil for shallow frying over medium heat.
Cook the tikkis:
Place the tikkis in the pan and cook for 3-4 minutes on each side, or until golden brown and crispy.
Serve:
Remove the tikkis and place them on paper towels to drain excess oil.
Serve hot with green chutney, ketchup, or yogurt dip.
β¨ Tip for extra crispiness:
Add a little bread crumbs on the outside before frying.
You can also stuff cheese or veggies in the center for a surprise filling.
