POV: the croissant dough totally failed… so I rolled it out, added warm jam, spiraled it up and somehow created the cutest little jammy rolls ever 🥐🍓✨

Beetroot Kanji: A Probiotic Superdrink

​Ingredients:

​2 medium beetroots, peeled and sliced
​1 large carrot, peeled and sliced
​1.5 liters of boiled and cooled water
​1 tbsp mustard seeds, crushed
​1 tsp red chili powder
​Salt to taste (around 1-1.5 tbsp)

​Process:

​Step 1: Prep the Veggies
Start by placing the sliced beetroots and carrots into a large, clean glass or ceramic jar. Add the crushed mustard seeds, red chili powder, and salt.

Step 2: Add Water and Ferment
Pour the boiled and cooled water into the jar, making sure all the vegetables are submerged. Give it a good stir with a clean wooden spoon. Cover the jar mouth with a muslin cloth and secure it with a rubber band. Place the jar in a sunny spot for 3-4 days. You'll notice the color deepen and tiny bubbles form, indicating fermentation. Stir it once a day.

Step 3: Serve and Enjoy!
Once the kanji develops a tangy flavor and a rich purple hue, it's ready! Pour it into glasses, and serve it chilled with a few pieces of the fermented vegetables on the side. Store the remaining kanji in the refrigerator.

Tandoori Chicken Tacos

​Ingredients:
​1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
​½ cup Greek yogurt
​2 tbsp tandoori masala
​1 tbsp ginger-garlic paste
​1 tsp lemon juice
​Salt to taste
​Small corn tortillas

​Toppings: diced red onion, cilantro, a squeeze of lime, and a drizzle of cooling raita or a spicy mango salsa (optional).

​Instructions:

​Marinate Chicken: In a bowl, combine chicken, yogurt, tandoori masala, ginger-garlic paste, lemon juice, and salt. Mix well and marinate for at least 30 minutes, or ideally, 2-4 hours in the refrigerator.

​Cook Chicken: Heat a cast-iron skillet or grill pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes per side, or until cooked through and slightly charred. You can also broil or bake the chicken until done.
​Warm Tortillas: While the chicken cooks, warm your corn tortillas in a dry skillet or microwave until pliable.

​Assemble: Dice the cooked chicken and assemble your tacos with the warmed tortillas, chicken, diced red onion, fresh cilantro, and a squeeze of lime.

Drizzle with raita or mango salsa for extra flavor!

Instant Rawa Dosa: Crispy, Quick & Delicious! 🥞

​Craving crispy dosa without the wait? This Instant Rawa Dosa is your new best friend! No fermentation, just mix, pour, and sizzle!

​Ingredients:
​1 cup fine semolina
​½ cup rice flour
​¼ cup all-purpose flour
​1 small onion, chopped
​Green chilies, ginger, curry leaves, cumin, hing, salt
​2-3 cups water
​Oil/ghee

​Instructions:

​Mix & Rest: Combine all dry ingredients, onion, chilies, ginger, and curry leaves. Gradually add water to form a thin, runny batter (like buttermilk). Let rest 10-15 mins.

​Sizzle Time! Heat a lightly oiled non-stick tawa over medium-high heat. Stir batter well. Pour from the outer edge inwards to create a lacy pattern.

Enjoy your crispy Instant Rawa Dosa hot with coconut chutney, sambar, or a potato curry! 🤤
