Easy and delish Chicken Pho yesterday! I love the freshness and simplicity of Vietnamese food. The soup relies on spices, onion, ginger, chicken broth, fish sauce and seasoning for the flavour. Not much ingredients required and no cutting except for the onion which was simply halved.Β 

For something that tastes so good, it's easy isn't it? My only regret is that I couldn't get basil which would have elevated this dish!Β

Mini Basque Burnt Cheesecakes for Teachers' Day! The only time that I'll be excused for burning food! 😜

If you have not tried mixing a cake batter with Thermie and you'd like to start, try this. It's an easy, fuss-free cheesecake.Β 

I've been using Dani Valent's Basque Burnt Cheesecake recipe but this time round, I tried the other recipe on Cookidoo. Both are good.Β 

These were baked at 250Β°c for about 15 mins. You could also try baking them at a lower temperature for a longer time. Recipe uses ~1kg of cream cheese and yields 7 minis (15cm).Β

I guess it doesn't matter as long as it tastes good and it is indeed! So pleased with Thermie's kneading quality. You know this Lahmacun? Pide? 🀭 is going to be good when the dough is light and pillowy soft after proofing.

The bread is soft and the tomato based filling peppered with spices is tasty! I used the least amount of tomato paste for a lighter tomato flavour.

Give this a try if you haven't!

Notes & tips:

I used lean protein - chicken instead of red meat and it tastes just as good to me.

I prefer to mince meat using Thermie itself because I can choose my preferred part and remove the fats before it is minced. There's usually no indication of fat percentage in pre-packed halal minced meat available outside so I prefer to do it myself.

For better results, cut the meat into pieces and partially freeze them before mincing. You may start from 4 sec / speed 6, check the meat and work the timer in baby steps until you get your preferred texture. If you're pressed for time, it's ok not to freeze it. The meat won't look minced but it will be ok. I didn't partially freeze the chicken pieces so it clumped together but I'm ok with that and I broke up some of the clumps while/after cooking the filling.

So my filling had clusters of little chicken balls. As if Lahmacun Pide is not confusing enough. πŸ˜†

Believe it or not I'm not much of a Chicken Rice fan but I really love this Uzbek 'Chicken Rice'. Traitor, I know. 😜 

Ok so Uzbekistan is one of the destinations on my travel bucket list and I was super excited when I saw this community recipe.

I think this is an Uzbek Chicken Plov-inspired recipe, adapted to Thermie cooking. The ingredients are similar but the method differs. Instead of browning the chicken and cooking the rice in the same pan, this recipe makes good use of Thermie's multi-layer cooking capability.

Verdict? I love this recipe (my kids too), from the simplicity in making it to all the unique flavours in the meal! I love the combination of sauteed vegetables and raisins in the rice flavoured with chicken stock and with steamed chicken juice dripping onto it. I'm sure the original way of cooking this by browning the chicken in the same pan would elevate the dish but this is still delish!Β

So pleased that the adults and children (including a selective eater just like Zayyan) enjoyed the food, bakes and teh tarik.

Zayyan enjoys going to Thermomix Sg office. He'll take the trolley, load the stuff and push it to the car. He even told me he wanted to be a Thermie advisor. Oklah can. πŸ˜‚

Stocks are low with no expected arrival date yet so here we are securing my customers' orders. Safekeeping one Thermie at my place for a month till it's time to unbox. This one is a 2nd purchase from one of my customers. Thank you for the faith and trust in me! I'll be seeing you soon! ❀️

Happy to chance upon a community recipe for this. Somehow the soup tastes better the following day!

Everything was done in Thermie including mincing my preferred chicken part, poaching the eggs and boiling the noodles.Β 

If you prefer, Thermie can fry anchovies too but I always use the air fryer.Β

Felt like chicken and waffles so I Cookidoo-ed. Waffles recipe. Checked. Suitable chicken recipe. So many, which one. I wanted something crunchy so I settled on the Chicken Katsu recipe. Not Southern style I know. πŸ™Š Had the thought of replacing the Panko breadcrumbs with cornflakes (ahh Swensens πŸ˜‹) but that probably won't work since I only had boneless chicken legs which would take longer to cook in the oven and burnt cornflakes would not be on anyone's menu.Β 

The chicken looks like it has been deep fried but nope, it's oven fried without the skin and it's just as good and crunchy thanks to the Panko breadcrumbs and some oil in the baking pan.

The combination of waffles, chicken and maple syrup is delectable and makes me feel like it's brunch even though the sun has set. 😜

After all that, the naughty kids wanted to have leftover waffles with ice-cream and the adults obliged. πŸ™ŠΒ 

Ps I cut the salt in the waffles recipe by half because I thought it was a lot and it turned out just nice for me.

I love Chicken Rendang. Before Thermie, I'd ask my mum to cook this dish. Since I got a Thermie, I started making it because it's good and that easy, especially with guided cooking (Cookidoo).

Anyone can cook using Cookidoo. Some customers shared about their husbands who started cooking/baking since Thermie came into their kitchen. I've heard of helpers using it to whip up dishes for the fam and of course the young digital natives love helping out too! I'm happy when I hear such stories. ❀️

In this video, I wanted to show how easy guided cooking is and how easy and mess free it is to cook in Thermie. Deseed, peel, chop, blend, saute and cook all in one 'pot' (mixing bowl). Add and weigh ingredients straight into the mixing bowl based on the given steps in the screen, turn the k**b to start cooking and leave it to Thermie to cook and stir your dish. Once the timer is up, Thermie will stop cooking with no intervention on your part.

Sharing some tips for this dish:

I omitted palm sugar and found it just nice. Palm sugar will add to the flavour of this dish but if you don't want to taste its sweetness, reduce the sugar in the recipe by half at least.

Peel, slice and freeze leftover ginger, galangal and turmeric for easier and quicker cooking. I add them in frozen form after a quick rinse.

I usually use all natural light coconut milk and toasted coconut paste or kerisik but I made do with the versions that I could get from a nearby shop that day.

The reason I have to exercise a little bit more each time I bake a batch. These chocolate chip cookies are so good, so addictive, so crunchy.Β 

My photo doesn't do justice to the cookies but they are really good ones that can rival one of my favourite bakeries along North Bridge Road.Β 

Use a good dark chocolate and you'll get that ideal sweetness, slight bitterness perfection. I used 70% cocoa dark chocolate and salted butter. Ooh so good.

Just 3 mins to make the cookie dough in Thermie and 10-12 mins to bake them.

I'd say this quick, easy bake is a classic staple in Thermie homes! πŸ˜‹
