How do we put broth in the xiao long bao?
Make a hole in the skin, pour the broth in and cover up the hole with additional skin? Of course not~
In fact, the "broth" is wrapped in the xiao long bao in the form of jelly.
Broth jelly is made from boiling fresh pig skin in a pressure cooker until it turns into soup juices. Place them in the fridge after they've cooled down (some steps are omitted here), and you'll get broth jelly.
The broth jelly will turn into liquid broth when the xiao long bao are steamed, and you'll get a delicious, fresh, tender and sweet xiao long bao.
