Three reunion dishes, all in one very capable Combi. Here’s your sign to cook up a Combi feast this Mid-Autumn Festival ✨​

INGREDIENTS​
Garlic Ginger Snapper:​
1 whole snapper (700–800g) | 3 garlic cloves | 4cm fresh ginger | 2 tbsp kecap manis | 1 tbsp light soy sauce | 1 tbsp rice vinegar | 1 tsp sesame oil​

Lotus Chips:​
100g lotus root | 2 tsp neutral oil | ¼ tsp salt ​

Pumpkin Rice:​
1 cup jasmine rice | 2 cups chicken stock | 180g pumpkin cubes | 3 shiitake mushrooms | 1 tsp sesame oil​

​1. Pat the snapper dry and score both sides. Combine the marinade ingredients, then spoon a thin layer over the fish.​
2. Slice the lotus root thinly and toss with oil and salt.
3. Add all the rice ingredients to the Combi Pan. ​
4. Arrange the snapper and lotus root in a single layer on the Bake Tray.​
5. Select COMBI MEALS and cook at 180°C for 17 mins.​
