Alchemist Pte. Ltd @ THAIFEX 2026

For the second year in a row, we are proud to support Umaji Village as they continue to expand their business in Thailand at THAIFEX!

As the biggest F&B-centric event in Asia, it has been our pleasure to facilitate business-matching between Umaji Village’s representatives and Thailand’s F&B retailers and F&B establishments!

🍊 Attendees were treated to the best of Umaji Village’s Yuzu-based products. From Yuzu Ponzu Vinegar to Yuzu Marmalade and even Yuzu Liqueur, we showcased the full suite of Yuzu flavours Umaji Village has to offer!

Thailand is a vast country so even though Umaji Village has established its presence there, we were still able to introduce many new people to Umaji Village and its Yuzu products at THAIFEX 2026!

🍊 New to this year, Umaji Village’s Yuzu Ponzu Vinegar is now being sold at Lopia Bangkok and its Yuzu Liqueur is now offered at Takashimaya Bangkok in addition to Prumplum Umeshu Bar from last year!

🍊 If you’re targeting the Southeast Asian F&B market but aren’t sure how to start or need further support, reach out to us at Alchemist Pte. Ltd!

Just like with Umaji Village in Thailand, we will be sure to make sure your foray into this market is a smooth and fruitful one!

That’s all for now and hopefully we’ll see you again at next year’s THAIFEX!

🍢 Kashirayaki (かしら焼)
This dish that’s endemic to the Higashimatsuyama in Saitama is reminiscent of the Yakitori we’re all familiar with but substitutes the chicken meat with pork jowl!

What helps to elevate Kashirayaki beyond just being Yakitori but with pork is the accompanying spicy miso sauce that gives the dish a real kick of spice and umami!

If you’re feeling adventurous, Kashirayaki made using more unconventional parts of the pig like the liver and intestines are also available!

🍧 Kakigoori (かき氷)
The Japanese counterpart to our local ice kachang dessert, Saitama’s Chichibu district is famous for their Kakigoori (Shaved Ice) and is a good place to visit in the summer!

Chichibu’s kakigoori uses natural ice sourced from the mountains during the winter that has been kept frozen. This ice is what gives Chichibu’s Kakigoori its signature ultra-soft texture!

While most syrups used to dress Kakigoori tend to taste pretty artificial, many shops in Saitama actually use fruit syrups made from seasonal fruits like peaches to elevate the taste of this simple dessert!

🍵 Sayama Tea (狭山茶)
As one of the top three varieties of luxury tea in Japan, Saitama’s Sayama Tea is a must-have for Japanese sencha (green tea) connoisseurs!

The defining characteristic of Sayama Tea is its rich tea flavour (moreso than almost every other sencha out there). This is due to the colder climate of Saitama’s tea-producing regions!

If you’re hoping to get the most premium Sayama Tea, visit Saitama in early May as that’s when tea from the new season is harvested and arrives on store shelves!

🎐 Kawagoe (川越市)
Sometimes referred to as a “Little Edo”, Kawagoe is a great place to experience Edo period Japan if you can’t fit Kyoto into your trip!

With its many preserved Edo-period buildings containing cafes, local souvenir shops and even a sake warehouse, you’ll have plenty to do while strolling down the main street and drinking in the sights!

Venture out a bit further to the Hiikawa Jinja Shrine, which is well-known for its instagrammable windchime corridor and photo-taking spots!

🚆 The Railway Museum (鉄道博物館)
A must-visit for Train Otaku, this museum is the largest of its kind and focuses on the railway systems in Japan as a whole rather than the high-speed trains we talked about in a previous entry!

The museum has a huge variety of decommissioned trains for you to enter and examine, from steam locomotives all the way to modern shinkansen and even the regular trains you use to get around!

If just exploring the interiors of the trains isn’t enough for you, use the Railway Museum Raffle App to book a driving session for the mini replica trains in the museum’s outdoor area!

🌸 Tokorozawa Sakura Town (ところざわサクラタウン)
Built as part of the “Cool Japan” initiative, Tokorozawa Sakura Town is home to the best that modern Japanese culture has to offer!

The biggest draw of the place is the Kadokawa Culture Museum, which has large movie set replications, digital art theatres and even a manga library with over 37,000 books from the acclaimed publication!

Also in the area is the TeamLab exhibit “Resonating Life in the Acorn Forest”. Located in Musashino Woods Park, it has a powerful fairytale-esque charm despite its smaller size!

[Staff Pick]

Happy Vesak Day!

For some reason Fukuoka seems to be pretty popular with Singaporean tourists right now and our staff are no exception! One of them came back from there recently so let’s take a look at a hidden spot they found during their holiday!

🔍 This time, the spotlight is on Hakozaki, the former site of Kyushu University!

A quaint neighborhood near Hakata station, Hakozaki is the place to be if you want to see what it's like to live as a Fukuoka city native!

🛍️ The main “tourist attraction” in Hakozaki is Youme Town, a large shopping complex comparable to other Fukuoka titans like Lalaport that has surprisingly (according to our staff) reasonable prices. If you’ve got shopping to do then this place is a must-visit!

👕 Also located in Hakozaki is Fukuoka’s only Super 2nd Street store. For fans of secondhand goods, this shop offers far more than the regular 2nd Street shops, with their goods ranging from anime goods to kitchen appliances in addition to clothing!

🍜 If you’re feeling hungry, check out Menchanko Tei, a menchanko (Hotpot-noodle hybrid dish from Fukuoka) specialty store that’s a short walk from the Super 2nd Street!

🏘️ Hakozaki is also a fairly large neighbourhood so you can wander around the residential areas, drop by cosy mom-and-pop shops (like the neighbourhood fruit shop our staff stopped by) and just experience what it’s like to live in Fukuoka city outside of the downtown area!

If you’re travelling but want to wind down a bit from the bustle of downtown Fukuoka, hop on the Kagoshima line from Hakata station and come explore this hidden slice of the city!

🥢 Himokawa Udon (ひもかわうどん)
Range from 1.5cm to a staggering 10cm in width, Himokawa Udon noodles are bar none the widest noodles Japanese cuisine has to offer and can even rival our local kway chap noodles in that regard!

The large size and weight of the noodles means that to enjoy it properly, one has to fold it into a smaller, more manageable piece or break it up using chopsticks.

Himokawa Udon noodles are often served cold with a dipping sauce during the hotter summer months or alongside a hearty vegetable hotpot called Okkirikomi when the weather gets colder!

🍡 Yaki Manju (焼きまんじゅう)
Manju is typically thought of as a confection but Gunma's Yaki Manju flips the script with its sticky sweet miso glaze that gets roasted over charcoal, turning it into a sweet-and-savoury snack!

Apart from the flavour, Yaki Manju also have an incredible texture, with the outside being sticky with charred bits from the roasting process and the inside being soft and fluffy due to the fermentation of the dough!

While it traditionally has no fillings, newer versions containing things like red bean paste, custard and even cheese so there's a ton of different flavours for you to try alongside the original!

🌱 Shimonita Negi (下仁田ネギ)
Leeks are a quintessential ingredient in Japanese cuisine and Gunma's famed Shimonita Negi variety is a must-try when you're in the area!

What makes these leeks special is that they're particularly sweet even amongst other leeks and have a sublime texture when boiled. As such, they're best enjoyed in sukiyaki.

Also available in Gunma is a special kind of rayu (Chilli Oil) called Negi Rayu. Made using Shimonita Negi, this rayu is not just a unique vibrant green colour but also has the actual leeks inside to be eaten as a condiment!

[ : Travelling in Gunma]
⛩️ Bukkosan Hosuiji Temple (佛光山法水寺)
The HQ of Japan's Bukkosan Buddhism Sect may not seem like a tourism destination from the name but it actually sports one of the best mountain views in Gunma!

Unlike other more rustic temples, this one is extremely modern, housing Buddhism-related sculptures, artworks and even workshops in facilities that wouldn't look out of place in a high-end hotel!

Surprisingly, this temple has a lot of Taiwanese influence in the cafe it runs, with their bubble tea being particularly well-known in the area alongside the other Taiwanese-inspired dishes that they sell!

♨️ Kusatsu Yubatake (草津湯畑)
When stopping by at Gunma's Kusatsu Onsen one of Japan's top hot spring towns, be sure to drop by the Yubatake (Hot Water Field), which is where the source of the town's famous hot spring water is!

The Yubatake's can't-miss scenery is at the heart of the springwater, with its unique jusxtaposition of the volcanic rock quarry and scalding-hot spring water with the complex array of pipes used to transport said water!

Stick around to observe their rare traditional Yumomi ceremony, where cold water is stirred into the hot spring water to cool it down by the staff while they perform a traditional folk song and dance!

🧶 Tomioka Silk Mill (富岡製糸場)
Listed as Japan’s first-ever silk-processing factory, this UNESCO World Heritage Site is a great place to visit for those interested in Japan’s industrial revolution!

The mill is actually still in use and visitors can pay a small fee of 200 yen to partake in guided tours of the silk mill and the warehouses where the silkworm cocoons are stored!

For a more hands-on experience, shell out about 4000 yen to take part in their Silk Bobbin workshop, where you get to make your own silk accessory to take home!

🇯🇵 A taste of Kumamoto, right here in Singapore!

We dropped by the Kumamoto Fair at Isetan Scotts to check out the incredible lineup, and the flavors did not disappoint.
If you love authentic Japanese specialties from Kyushu, here is exactly what you need to hunt down:

🥧 FEAL’s Pies: The pastry is light and flaky and the pie is generously packed with incredibly flavourful fillings. We tried the earl grey apple and it did not disappoint!

🍯 Sugi Bee Garden's Honey: 100% pure honey (Unlike the cheap stuff you see in supermarkets) with a wide range of refreshing infused fruit flavours. Mix with water for an easy-to-make, healthy drink!

🥮 Kumamon Pancake: The iconic mascot in pastry form! They come in a few different flavours and look just as good as they taste.

🍓 100% Pure Strawberry Smoothie: Pure bliss for fans of Japanese strawberries. Made entirely from strawberries, it is incredibly fresh and has an unparalleled Strawberry flavour!.

The fair is running from now until 4 June at Isetan Scotts Supermarket (B1). Don't miss out on these incredible flavors!

【Staff Pick】

🧑‍🌾 Got both a car and time to kill while heading to Oita for the hot springs? Then swing by Akkiraraki Farm for a unique fruit-picking experience!

One of our staff members recently went on a trip to the Kyushu region and stopped by Oita prefecture! They went to this farm that their local friend recommended so you know it’s authentic!

Located in Bungo-ono City, Akkiraki farm specialises in strawberries (which grow well in the Kyushu region’s climate!)

🧺 Of course, you could just buy some from the small shop on the farm (At ¥400 they're an absolute steal) or dine at their cafe but we went for their strawberry-picking package instead. At ¥2200, the price might be a little steep but you have unlimited time to pick as many strawberries as you want so if you love Japanese strawberries, it’s actually pretty worth it!

While they aren’t as premium as some other varieties in Kyushu like Fukuoka’s Amaou variety, Akkiraka Farm’s Saga Honoka strawberries are no slouch either! Here’s some of our staff member’s thoughts on them:

🍓 Flavour: They’re quite sweet like what you’d expect of a good Japanese strawberry. They’re also a little tart so the sweetness isn’t too overwhelming
🍓 Size: I think these got the Amaou variety beat (At least the ones you see in the supermarkets). Some of the ones we picked were about half the size of my palm!
🍓 Juiciness: Saga Honoka strawberries are really juicy, with even the smaller ones we picked having plenty of juice!

🌡️ A convenient feature of the farm is that the strawberries are grown in greenhouses, allowing you to pick them regardless of the weather! (It was actually raining when our staff member went)

The only downside of this place is that it's somewhat remote so unless you have a car it's gonna be hard to get here. You also have to make a reservation in advance so do remember to do that before coming down!

[ : Dining in Chiba]
🥜 Chiba Peanuts (落花生)
In Chiba, the humble peanut is no cheap throwaway food like it is in the rest of the world; They can cost as much as 10 SGD per 100g!

These peanuts get the premium staus due their rich, buttery flavor, touch of sweetness and intense sweetness and are best eaten boiled to taste their natural flavour!

You'll find them everywhere from Rakkasei-miso (peanuts stir-fried with sweet miso) to the iconic Peanut Monaka, a cute, peanut-shaped wafer filled with sweet bean paste and chopped nuts.

🍗 Fried Chicken Soba (唐揚げそば)
If you find yourself at Abiko Station, you have to stop at Yayoi-ken for their legendary Karaage (Fried Chicken) Soba. Despite the dish's simplicity, it has proven to be a hit with Japanese and foreigners alike!

The main draw of the dish here is the karaage, which is unsually massive and can be as big as a whole fist! If you want to get your protein intake up or just love fried chicken then this unique dish is for you!

Be warned that the shop is located on the train platform itself so you have to get a train ticket to try this dish. As such, we recommend having it while passing through Abiko station from elsewhere!

🌶️ Katsuura Tantanmen (勝浦タンタンメン)
Originally created over fifty years ago to warm up local fishermen and ama (female divers) after coming out of the cold sea, Katsuura Tantanmen is the perfect dish to have if you're in Chiba during the winter months!

Unlike typical sesame-based Tantanmen that's frankly not very spicy, Chiba’s version comes loaded with chili oil, minced pork, and plenty of sautéed onions and will surely delight the Singaporean palate!

Different restaurants serve up different renditions of this dish, with some replacing the usual soy sauce-based broth with a miso-based one etc. so have a look around to find a version that appeals to your tastebuds!

🛒 Katsuura Morning Market (勝浦朝市)
Is Tsukiji Fish Market getting a bit too touristy for you? Then make your way down to Chiba for the Katsuura Morning Market, which is one of the top 3 biggest morning markets in Japan!

The Katsuura Morning Market's products vary heavily depending on the season (Think Bamboo Shoots in Spring and Chestnuts in Autumn) so no matter when you go, there'll always be something seasonal for you to try!

Unlike many of the markets in Tokyo, Katsuura Morning Market has many more older-style shops, giving it a rustic and more authentic feel than what you would find in Tokyo!

🌾 Oyama Senmaida (大山千枚田)
Chiba may not exactly be known for rice cultivation but it's home to Oyama Senmaida: One of the few rice plantations that is built around allowing guests to partake in hands-on rice-planting activities!

Not only will local farmers guide you on how to properly plant the rice but the staff at the main facilities will also teach you how to store as well as prepare the rice in a kamado (a Japanese traditional stove for boiling rice)!

After you're done rice-planting, you can dine on local specialties (Including the plantation's rice!) in their cafe that's housed inside a traditional 120 year-old building!

🦈 Tateyama Shark Scramble (館山シャークスクランブル)
Adrenaline seekers, head to the southern tip of Chiba to go diving and seize the rare opportunity to get up close to a huge shark population in Tateyama's Shark Scramble!

The star of the show is the Banded Houndshark, which can gather in numbers of a few hundred and school together to create the famous "Shark Tower"! They may not pose a threat to humans but the rush from being so close to so many sharks is unparalleled!

Head over from January to April to partake in the rare activity of underwater bird-watching as the Japanese cormorant (A bird that dives underwater to hunt) season arrives in addition to the shark-watching!
