i saw roasted corn salsa online and had to make my own version 🌽

sweet roasted corn, black beans, tomatoes, cilantro, lime, and a few simple seasonings turned into the perfect summer side.

served it with veggie fajitas and there were no leftovers.

peppers outgrew their pots — happens fast once they take off. moved them up, gave them fresh soil and a good water. they’ll perk back up in a day or two.

herbed quinoa salad with cherry tomatoes, cucumber, fresh basil, parsley, green onion, lemon, and a little dijon to tie it all together 🌿 cooked the quinoa in broth instead of water and it makes all the difference. light enough for summer, filling enough to actually matter. made a big batch — some for here, some for someone else 🍋
