Save your pickle juice!
Whether you make your own pickles or buy them from the store, you can save the juice and make pickled eggs easily. Pickled eggs are a tasty way to add flavor dishes, like potato salad, deviled eggs, egg salad sandwiches, or by themselves for a protein packed snack.
Once you finish your pickles, don’t throw out the leftover pickle juice! I add my eggs directly into the pickle jar if I’m not making very many. If I have a lot of juice, I’ll use a clean 1/2 gallon mason jar.
Boil and peel your eggs. Let them cool before adding them to the pickle juice.
Place the hard-boiled eggs into the jar with the leftover pickle juice. You want the eggs to be fully submerged, so if necessary, add more juice or adjust the eggs to fit comfortably.
Close the jar and store it in the fridge. Let the eggs sit in the pickle juice for at least a couple of days for them to absorb the flavors. The longer they sit, the stronger the flavor.
This is a great way to avoid waste and to make use of leftover pickle juice. You can also experiment by adding extra ingredients like garlic, hot peppers, or mustard seeds to give the eggs more flavor!
