Pumpkin Crisp
A warm, comforting dessert made with a spiced pumpkin layer topped with a crispy, buttery crumble, perfect for fall.
Recipe
Ingredients:
1 can (15 oz) pumpkin puree
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
2 large eggs
1/2 cup evaporated milk
For the Topping:
1 cup rolled oats
1/2 cup flour
1/2 cup brown sugar
1/4 cup butter, melted
1/4 teaspoon baking powder
1/4 teaspoon salt
Directions:
Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
In a large bowl, mix pumpkin puree, sugar, cinnamon, nutmeg, ginger, salt, eggs, and evaporated milk until smooth. Pour into the prepared dish.
In a separate bowl, combine oats, flour, brown sugar, melted butter, baking powder, and salt. Stir until crumbly.
Evenly sprinkle the oat topping over the pumpkin mixture.
Bake for 45–50 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
Let cool for 10 minutes before serving. Serve warm, optionally with a scoop of vanilla ice cream.
