Sometimes when I have leftovers, I look for ways to make other dishes with it, so a Potato and Beef Casserole Au Gratin/ "Pastelón de Papas Gratinadas" is a simple comfort food dish with lots of flavor that can be made ahead of time.
This dish consists in layers of creamy mashed potatoes, stuffed with juicy seasoned cooked ground beef/ "picadillo beef", and topped with crusty melted cheese.
Who can resist this Potato and Beef Casserole? Not me, for sure!

Italian dishes are one of my favorites to cook, because of its simplicity, versatility, freshness and deliciousness. This was no exception, a simple chicken cutlet cooked with olive oil, herbs, seasonings and parmesan cheese, then topped with a tomato cream sauce, mozzarella cheese and baked until it’s golden. As a side, I boiled some gnocchis, then sautéed in olive oil, garlic, fresh basil, parmesan cheese, salt, pepper and prosciutto. “Molto delizioso!”😋🇮🇹

Puerto Rican Plantain Lasagna, better known as Pastelón, are layers of thinly-sliced sweet ripe plantains, cooked “picadillo” style ground beef, egg mixture and cheese, all in one cozy casserole.

Each family has their own version of Pastelón, like with no cheese, but with green beans.

It’s the ultimate in comfort food, so any time is a good time to prepare, bake and serve it.😋

One of our favorite Breakfast dish is the savory French Quiche Lorraine, so for Mother’s Day, I prepared two different types; the traditional Quiche Lorraine and the Mushrooms & Caramelized Onions. I added a rich and creamy custard, then baked and Voilà!🇫🇷🥧😋

I’ve been making this creamy vegetable soup for many years. It’s a staple soup for my family, the one we turn to when we are craving for some hot comfort food. I simmered and blended a variety of vegetables like carrots, peppers, pumpkins, garlic, onions, and potatoes in chicken broth, then enriching it with cream, cheese, fresh cilantro and seasoning to taste, in addition to some crusty bread on the side, well I can only say it’s simply delicious!😋🍜🥖

Last Friday I decided to make one of my husband’s favorite dishes, Chickpeas with Spanish Chorizo, better known as “Potaje de Garbanzos y Chorizo”. It’s a hearty Spanish stew featuring smoky chorizo, tender chickpeas and a rich tomato-garlic broth. Eat it by itself with some crusty bread on the side for dunking or as a side dish to complement any main course of meat or fish. Olé!💃🏼🇪🇸🥘
