Quick 20-min dinner: golden fried squash & tender chicken in creamy cottage cheese sauce!

Ingredients
1 small squash (zucchini or yellow), sliced

1 chicken fillet (breast), cubed

100g cherry tomatoes, halved

1 tbsp cottage cheese

70ml (¼ cup) 10% cream (or heavy cream)

Salt, pepper to taste

Vegetable oil

Fresh herbs (parsley, dill or basil) for garnish

Instructions
Heat oil in skillet over medium-high. Fry squash slices until golden crust forms (4-5 min).

Add cubed chicken; fry 5-7 min until browned on all sides.

Season with salt & pepper. Stir in cottage cheese, cream & cherry tomatoes.

Reduce heat to low; simmer covered 5-10 min until chicken cooked through & sauce creamy.

Garnish with fresh herbs. Serve hot!

Double Crunch Honey Garlic Chicken Breasts

Crispy outside, juicy inside, coated in addictive honey-garlic sauce—perfect dinner tonight!

Ingredients
4 chicken breasts (pounded or halved)
2 cups flour
Spices: 4 tsp salt,
4 tsp pepper,
3 tbsp ground ginger,
2 tbsp nutmeg,
2 tsp thyme,
2 tsp sage,
2 tbsp paprika,
1 tsp cayenne
4 eggs + 8 tbsp water (egg wash)
Sauce: 3–4 garlic cloves minced, 1 cup honey, ¼ cup soy sauce, 1 tsp black pepper

Oil for frying

Instructions
Pound chicken to ½-inch thick. Sift flour + all spices (makes enough for 2 batches).

Whisk eggs + water for egg wash.

Dip chicken: flour → egg wash → flour again (press coating well).

Fry in ½-inch hot oil, med-low heat, 4-5 min per side till golden & crispy. Drain on rack.

Sauce: Sauté garlic in 2 tbsp oil. Add honey, soy, pepper; simmer 5-10 min till thick.

Toss crispy chicken in sauce or drizzle over. Serve with rice/noodles.

Tip: Make extra sauce for dipping!

80g butter

80g sugar
220g flour
1.5 bars milk chocolate

Method:
–Mash melted butter with sugar and an egg, add flour and knead the dough.
–Add chocolate to the dough, (grind a bar, you can also add chocolate drops).
–Form the cookies and put them to a preheated 180 C oven for 15-20 minutes.

Cheesy Ranch Potatoes & Smoked Sausage

Golden roasted potatoes tossed in zesty ranch, baked with creamy sour cream, cheddar & mozzarella plus smoky sausage—hearty comfort meal!

Ingredients
2 lbs russet or Yukon gold potatoes, diced 1-inch cubes

2 tbsp olive oil or melted butter

1 packet (1 oz) dry ranch seasoning mix

1 cup sour cream

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

3 green onions, sliced (plus extra for garnish)

½ tsp garlic powder

½ tsp paprika (optional)

Salt & black pepper to taste

12–14 oz smoked sausage, sliced into coins

Instructions
Preheat oven to 400°F. Grease 9×13 baking dish.

Toss potatoes with oil/butter, ranch mix, garlic powder, paprika, salt & pepper. Spread in dish.

Roast 25–30 min, stirring once, until golden on edges.

Stir in sliced sausage, sour cream, cheddar, mozzarella & half green onions.

Bake 10–15 min more until cheese melted & bubbly.

Garnish with remaining green onions. Serve hot!

Easy Peach Cobbler

Ingredients
½ cup butter

4 cups sliced peaches (fresh, thawed frozen, or canned)

½ cup sugar (to toss with peaches)

Batter:

1 cup all-purpose flour

1 cup sugar

2 tsp baking powder

¼ tsp salt

1 cup milk

Optional: 1 tsp vanilla, ½ tsp ground cinnamon

Instructions
Heat oven to 350°F (175°C). Put butter in a 9×13-inch baking dish and place in oven to melt.

If using fresh or thawed peaches, toss slices with ½ cup sugar. If using canned, drain one can and keep the juice from the other.

In a bowl, whisk flour, 1 cup sugar, baking powder, and salt. Add milk (plus vanilla and cinnamon if using); whisk until smooth.

Remove dish from oven. Pour peaches (and their juices) evenly over melted butter. Do not stir.

Pour batter evenly over peaches. Do not stir.

Bake 35–40 minutes until top is golden and set. Let rest a few minutes and serve warm (great with vanilla ice cream).

Ingredients
Cake (makes two 9" layers):

2 cups all-purpose flour

2 cups granulated sugar

¾ cup unsweetened cocoa powder

2 tsp baking powder

1½ tsp baking soda

1 tsp kosher salt

1 tsp espresso powder

1 cup milk (or buttermilk)

½ cup vegetable oil

2 large eggs

2 tsp vanilla extract

1 cup boiling water

Chocolate Buttercream (for frosting):

1½ cups butter, softened

1¼ cups cocoa powder

5 cups powdered sugar

⅔ cup milk

2 tsp vanilla

Pinch salt

Instructions
Preheat oven to 350°F. Grease two 9" cake pans.

Whisk flour, sugar, cocoa, baking powder/soda, salt, espresso powder in large bowl.

Add milk, oil, eggs, vanilla; mix medium speed till combined.

Reduce speed; carefully add boiling water till smooth (batter thin).

Divide batter in pans; bake 30-35 min till toothpick clean. Cool 10 min in pans, then fully on rack.

Frosting: Beat butter fluffy. Gradually add cocoa & powdered sugar, then milk/vanilla/salt till spreadable.

Frost cooled layers.

Rich chocolate poke cake soaked in caramel & condensed milk, topped with whipped cream & toffee—irresistible!

Ingredients
1 box devil's food cake mix (plus 1¼ cups water, ½ cup oil, 3 eggs)

½ can (14 oz) sweetened condensed milk

8 oz caramel ice cream topping (divided)

3¼ (1.4 oz) chocolate-covered toffee bars, chopped (like Heath)

1 (8 oz) tub frozen whipped topping, thawed

Instructions
Preheat oven to 350°F. Grease bottom of 9x13 pan.

Mix cake per box; pour in pan. Bake 30-35 min till toothpick clean. Cool 5 min.

Poke holes all over with fork.

Warm condensed milk + 6 oz caramel till pourable; drizzle over cake to soak.

Sprinkle chopped toffee evenly.

Cool fully. Frost with whipped topping; drizzle rest of caramel.

Chill before slicing. Serves 12-15.

Moist Banana Cake

Ingredients
1½ cups mashed ripe bananas (3-4 large)

2 tsp lemon juice

3 cups all-purpose flour

1½ tsp baking soda

¼ tsp salt

¾ cup butter, softened

2⅛ cups white sugar

3 large eggs

2 tsp vanilla extract

1½ cups buttermilk

Instructions
Preheat oven to 275°F. Grease & flour 9x13 pan.

Mix mashed bananas with lemon juice; set aside.

Whisk flour, baking soda, salt together.

Beat butter & sugar fluffy (3 min). Add eggs one at a time, then vanilla.

Beat in banana mixture. Alternate adding flour mix & buttermilk just until combined.

Bake 60-65 min till toothpick clean.

Place HOT pan in freezer 45 min (makes it super moist!). Frost when cool.

Smoked Sausage & Rice One-Pan Skillet

Ingredients
14 oz smoked sausage, coined

1½ cups uncooked instant rice

1 red bell pepper, diced

1 yellow onion, diced

2 garlic cloves, minced

2 cups chicken broth

1 tbsp olive oil

1 tsp Cajun seasoning

½ tsp paprika

Salt/pepper

Optional: ½ cup cheddar shreds

Instructions
Heat oil in skillet over med. Brown sausage 4 min.

Add onion, pepper, garlic; cook 3 min until fragrant.

Stir in rice, Cajun, paprika, salt/pepper.

Add broth; boil then simmer covered 8-10 min till rice fluffy.

Stir in cheese if using; rest covered 2 min. Serves 4.
