Getting my creativity on yesterday. Spaghetti squash topped with a meaty, veggie, red sauce 🤌🏻

I can’t wait until the vegetables are from my own backyard. Not the meat. I can’t handle a cow.
But I can handle draining the meat with my new silicone clip on strainer. I don’t even know of it’s for grease but we did it anyway and it worked. 🔗 👇
If you have never cooked a spaghetti squash before, you need to try it! Pulling it apart with a fork is very satisfying!

Cheesy chicken taco rice!

Easy peasy! Inexpensive! Delicious! This will definitely be made again sometime soon.

Warmer weather has us outside all evening so this sheet pan chicken with whatever else I had laying around was the perfect choice.

[potatoes] [cherry tomatoes] [capers]
[zucchini] [kalamata olives]

Of course I dowse it in EVOO and lemon!

Delicious, easy meal!
