Southern Italian Lasagna Rice

This dish captures the flavors of lasagna—rich meat sauce, cheeses, herbs, and tomatoes—but replaces pasta noodles with seasoned rice. The result is a hearty baked rice casserole with a distinctly Southern Italian character.
Ingredients
Rice Base
* 3 cups long-grain rice
* 6 cups beef broth
* 2 tbsp olive oil
* 1 tsp salt
Meat Ragù
* 2 lbs lean ground beef
* 1 large onion, diced
* 4 cloves garlic, minced
* 2 (28 oz) cans crushed tomatoes
* 1 (15 oz) can tomato sauce
* 2 tbsp tomato paste
* 2 tsp oregano
* 2 tsp basil
* 1 tsp parsley
* Salt and black pepper to taste
Cheese Layer
* 24 oz ricotta cheese
* 2 eggs
* 1 cup grated Parmesan
* 2 cups shredded mozzarella

Preparation
1. Cook the Rice
Cook rice in beef broth until tender. Fluff and set aside.
2. Prepare the Ragù
Brown beef with onion and garlic. Add tomatoes, sauce, paste, and seasonings. Simmer 45 minutes.
3. Prepare the Cheese Mixture
Mix ricotta, eggs, and Parmesan until smooth.
4. Assemble
In a greased 9x13-inch baking dish:
* Layer 1: Rice
* Layer 2: Meat ragù
* Layer 3: Ricotta mixture
* Layer 4: Mozzarella
Repeat layers once more.
Finish with:
* Remaining mozzarella
* Parmesan cheese
5. Bake
* 375°F for 35–40 minutes
* Rest 15 minutes before serving
