Frozen coffee banana smoothie

3/4 cup cold strong brewed coffee
1/2 cup whole or almond milk
2 ripe bananas, frozen and cubed
2 tablespoons honey
2 teaspoons unsweetened cocoa or cacao powder
1/2 cup crushed ice
Whipped cream for the top

Toss the frozen banana chunks, cold coffee, milk, honey, cocoa powder, and ice right into your blender. Just blend everything together on high speed until it gets completely smooth and thick. Pour the whole thing into a big glass and add a generous sq**rt of whipped cream on top if you have a can in the fridge.

It is my absolute favorite way to wake up on warm mornings.

9-inch graham cracker crust
Start by stirring the boiling water into the jello powder until it completely dissolves, then mix in the ice water to cool it right down. Next, gently fold the cool whip into the bowl until the whole mixture is totally combined and turns a nice soft pink color. Just scoop the filling into your graham cracker crust, smooth out the top, and let it chill in the fridge for a few hours until it sets up firm.
It is such a light dessert and slices beautifully once it is completely cold.

cup of chopped dill pickles
block of cheddar cheese, cut into cubes
half cup of mayo
spoonful of sour cream
splash of pickle juice
fresh dill
salt and pepper to taste
Boil your pasta according to the box, drain it, and rinse it with cold water until it is completely cooled down. Whisk the mayo, sour cream, pickle juice, dill, salt, and pepper together in a large bowl to make your dressing. Add the cooled pasta, the chopped pickles, and the cheese cubes into the dressing and stir everything until it is well mixed. Cover the bowl and let it chill in the fridge for at least an hour before serving.
It honestly tastes even better the next day once the pickle flavor really soaks into the noodles.

Chicken enchiladas with sour cream white sauce

2 cups shredded cooked chicken
8 flour tortillas
2 cups shredded Monterey jack cheese
3 tablespoons butter
3 tablespoons flour
2 cups chicken broth
1 cup sour cream
1 small can diced green chiles

Roll up the shredded chicken and about half the cheese in the tortillas and line them up side by side in a greased baking pan. For the sauce, just melt the butter in a skillet, whisk in the flour for a minute, and then slowly pour in the chicken broth while stirring constantly until it gets nice and thick. Pull the pan off the stove and mix in the sour cream and green chiles until it is smooth. Pour that whole creamy mixture right over the enchiladas, sprinkle the rest of the cheese on top, and bake it uncovered at 350 degrees for about 20 minutes until the edges are bubbling.

The white sauce makes this so much better than the regular canned red enchilada sauce.

2 pounds ground beef
4 peeled and diced Yukon gold potatoes
2 cans mixed veggies, don't drain them
4 cups beef broth
Salt, pepper, and onion powder to taste

Just brown the ground beef in a large pot and drain off the excess fat. Throw in your chopped potatoes, dump in the cans of mixed vegetables juice and all, and pour in the beef broth. Add in your salt, pepper, and onion powder, then give it all a good stir. Let it come up to a boil, then turn the heat down and leave it to simmer until the potatoes are completely tender.

Makes a ton so we will be having leftovers for lunch tomorrow.

Made a big bowl of creamy cheesecake fruit salad

2 cups sliced strawberries
2 chopped green apples
1 cup halved grapes
1 cup pineapple chunks
1 cup sliced bananas
8 oz softened cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 tub whipped topping
Caramel sauce for drizzling

Grab a large mixing bowl and beat the softened cream cheese together with the powdered sugar and vanilla extract until the mixture gets perfectly smooth and fluffy. Gently fold the tub of whipped topping right into that cream cheese base so it stays beautifully light and airy. Once your sweet dressing is completely combined, toss in all the sliced strawberries, chopped apples, halved grapes, pineapple, and bananas, stirring very gently until all the fruit is heavily coated. Scoop it out into individual bowls and finish it off with a nice thick drizzle of caramel sauce over the top right before eating.

There is never a single spoonful left over when I bring this to a family gathering.

Philly cheesesteak sloppy joes for dinner tonight

1 lb ground beef
1 diced yellow onion
1 chopped green bell pepper
1 cup beef broth
Splash of Worcestershire sauce
Small spoonful of cornstarch
Provolone cheese slices
Soft hamburger buns

Brown the ground beef in a large frying pan right alongside the diced yellow onion and chopped green bell pepper until the veggies are tender and the meat is fully cooked, then drain away any fat in the pan. Whisk the beef broth, Worcestershire sauce, and cornstarch together in a little bowl until smooth, then dump it straight into the skillet with the beef mixture. Let the whole thing bubble gently on low heat for a few minutes until that sauce gets really rich and clings to the meat. Place the slices of provolone cheese right over the top of the hot mixture, cover the pan with a lid for just a minute until it gets perfectly gooey and melted, and then heap big spoonfuls onto your hamburger buns.

It is definitely a messy meal that requires a big stack of napkins on the table.

Oil for frying
2 tablespoons melted butter
1/2 cup white sugar
1 tablespoon ground cinnamon

Mix the cornstarch and water together in a small cup until smooth. Get a skillet going on the stove and toss in the chopped peaches, brown sugar, and that cornstarch liquid, letting it all simmer together until the juices get really thick and bubbly. Take the pan off the hot burner, stir in the vanilla extract, and give the mixture some time to cool down so it does not burn your hands. Lay out an egg roll wrapper, spoon a hearty scoop of the cooled peach filling right into the center, lightly wet the edges with your fingers, and fold it up tightly. Heat up some oil in a frying pan and gently place the rolls in, letting them sizzle for a few minutes on each side until they get deeply golden and crispy. Let them rest on paper towels for just a minute to drain, then immediately coat them in the melted butter and roll them heavily through the mixture of white sugar and cinnamon.

Take the loaf of French bread and slice it right down the middle lengthwise so you have two long halves to work with. Slather a good layer of pizza sauce over both pieces and load them up with plenty of shredded cheese, the sliced pepperoni, and the cooked ground beef. Sprinkle a dash of pizza seasoning over the top for extra flavor, then pop them into a 375 degree oven. Let them bake for about fifteen to twenty minutes until the crust gets perfectly toasty and the cheese is completely melted and bubbling. Pull the bread out and give it a few minutes to settle and cool down slightly before grabbing a knife to slice it up into portions.

Big batch of Doritos taco salad for a crowd

2 heads chopped iceberg lettuce

2 large diced tomatoes
2 lbs ground beef
1 packet taco seasoning
1 large bag of Nacho Cheese Doritos
1 bottle Catalina dressing

Brown the ground beef in a skillet and stir in the taco seasoning with a splash of water just like you normally would for taco night, then set it aside to cool down a bit so it does not wilt the fresh greens. Get a massive bowl and toss the chopped iceberg lettuce together with the diced tomatoes and shredded cheddar cheese. Right before everybody is ready to eat, crush up the bag of Doritos just a little bit and dump the chips right into the bowl along with the cooled taco meat. Pour the bottle of Catalina dressing over everything and give it a really big stir until all the veggies and chips are perfectly coated.

2 boxes of graham crackers

Start by beating the heavy cream, powdered sugar, and vanilla together in a big bowl until the mixture gets nice and thick. Grab a regular rectangular baking dish and lay down a single layer of graham crackers right on the bottom, breaking some pieces to fit the edges if you have to. Spread a good amount of the whipped cream smoothly over the crackers and then add a generous layer of the sliced strawberries. Just keep repeating those layers of crackers, cream, and berries until the dish is full, making sure you finish it off with the cream and a pretty layer of strawberries on top. Cover the dish and let it chill in the fridge for at least four hours or overnight so the crackers get totally soft and cakey.

It is wonderfully light and refreshing straight from the fridge.

Baked this sloppy joe tater tot casserole for dinner

2 lbs ground beef
2 cans sloppy joe sauce
1 and a half jars nacho cheese
1 bag tater tot rounds
1 cup shredded cheddar cheese

I started by browning the ground beef in a large skillet and draining off the extra grease before pouring in both cans of the sloppy joe sauce. Once the meat mixture was heated through, I spread it out evenly into the bottom of a large baking dish and smoothed the nacho cheese right over the top. Next, I took the tater tot rounds and arranged them in a flat layer to completely cover the cheese. I popped the dish into the oven at 375 degrees for about 40 minutes until the tots were getting golden and crispy, then I sprinkled the shredded cheddar over the entire thing and baked it for just five more minutes so the cheese could perfectly melt.

Such a quick and filling dinner that really hits the spot on a weeknight.
