Prismatic Glow Popcorn Clusters
Ingredients
8 cups plain popped popcorn (air-popped or stovetop preferred)
1/2 cup unsalted butter
1/2 cup light corn syrup
1 cup granulated sugar
1 teaspoon vanilla extract
Neon food coloring (pink, blue, purple, green, and yellow work well)
Edible glitter or luster dust
Optional Toppings:
Mini marshmallows
Colorful sprinkles
Edible confetti
Directions
1. Prepare the Popcorn: Spread the popped popcorn onto two large baking sheets lined with parchment paper. Ensure no unpopped kernels remain.
2. Make the Candy Coating: In a medium saucepan over medium heat, melt the butter, corn syrup, and sugar together, stirring constantly until the mixture boils. Let it boil for 2-3 minutes without stirring. Remove from heat and stir in the vanilla extract.
3. Color the Candy Coating: Divide the hot candy mixture into separate bowls (one for each desired color). Add a few drops of neon food coloring to each bowl and stir until fully blended.
4. Coat the Popcorn: Pour each color of candy mixture over sections of the popcorn. Use a spatula to gently toss and coat the popcorn evenly with the colored syrup.
5. Bake for a Crisp Finish: Preheat your oven to 250°F (120°C). Place the coated popcorn on the baking sheets in a single layer. Bake for 15-20 minutes, stirring halfway through to prevent sticking.
6. Add the Glow: While the popcorn is still warm, sprinkle edible glitter, luster dust, or confetti over the clusters. Let cool completely.
7. Serve and Store: Break the popcorn into clusters and serve immediately. Store in an airtight container for up to 1 week.
