5$ fried rice to feed 3.

4 cups rice, leftover, white
1/2 cup peas and carrots mix
1 chicken breast, diced
One bunch scallions
1/2 small yellow or white onion, diced
2 mushrooms, if desired
2 tbs oil
Salt to taste
Soy sauce to taste
1 egg, beaten (optional)

Cook veg in pan on high heat with oil until onions translucent.

Add diced chicken, cook until done.

Add egg, scramble. Add rice. Cook until hot.

Toss with soy, salt to taste, sprinkle diced scallions on top.

Fried rice savings tips. Hint: it’s not always the time to buy in bulk. Buy big when you save big. Buy small when you need small. Don’t commit the cardinal sin of food waste!

First cheap dad recipe in the books, though certainly not the first I’ve made.

I love black bean tostadas. I’ve loved tostadas in general since I was a kid, I enjoy the black beans more as an adult than I did as a younger person.

The hero of this dish was the jalepeno in the beans for sure.

What’s your go-to healthy budget meal?

I’ll go first, mine is chili. Easy to make, lots of protein, and the meal itself is generally very healthy, it’s the junk folks put on it that isn’t.

I often add extras to my chili, hard squashes that can stand up to long cooking, sweet potato, etc.

I also love that it’s easy to swap proteins in. Don’t want beef? Use turkey, chicken, or buffalo. Or, just go vegan with it. Super easy to adapt.

Best part? It’s usually better left over and in the right season we like to eat a big pot over the course of a week.

Food prepping for the week. About 10$ for protein for the week for lunch meals. Just add salad, or rice and veg, and you’re there.

Also goes great in stews, soups, and pot pies.

Be sure to save the bones in a freezer bag for stock later!

Welcome to the channel everyone. I’m excited to be on this journey with you.

I’m also excited to share my reason for wanting to make this channel.

It all goes back to my mother.

Mom was sick when I was a kid. As a result my brothers and I grew up for the first part of our lives on public assistance with a mother that, no shade, was a bad cook.



I started cooking when I was about 7. Making simple meals to help out mom. I’ve loved to cook ever since.

At many times of my life I’ve been tight for budget and learned how to cook good food on the cheap. That’s what this channel is about. It’s for all the single moms and dads, who like me at some point struggled to get by and realized it’s much cheaper to cook at home than to have someone else cooking for you.

All that said. Hit me in comments to introduce yourself, tell me where you’re from, and maybe challenge me with a budget for one meal to feed my family of 3.

I’m so excited for these first steps, and looking forward to get to know you as we progress.
