Instructions:
1. In a mixing bowl, combine sliced strawberries and 2 tablespoons of sugar. Toss gently and allow to sit for about 30 minutes to create a syrup.

Instructions:

- 1.5 cups granulated sugar
- 1/4 cup fresh lemon juice
- 1 packet (1.75 oz) fruit pectin

Instructions
1. Start by washing the strawberries thoroughly under cold water. Hull the strawberries, removing the green tops, and then cut them into quarters.
2. In a large mixing bowl, combine the quartered strawberries and granulated sugar. Stir gently and let them sit for 30 minutes to allow the sugar to draw out the juices.
3. After 30 minutes, transfer the strawberry mixture into a large pot over medium heat. Add the fresh lemon juice and bring the mixture to a boil, stirring frequently.
4. Once the mixture reaches a rolling boil, add the fruit pectin, stirring constantly. Bring the jam back to a boil for another 1-2 minutes until the mixture thickens.
5. To check if the jam is ready, place a spoonful on a cold plate to cool for a minute. Run your finger through it; if it holds its shape, it is ready for canning. If not, boil for an additional minute and test again.
