Ingredients:
- 2 cups chocolate sandwich cookie crumbs
- 1/4 cup unsalted butter, melted
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup mini chocolate chips
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate chip cookie dough ice cream, softened
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Directions:
1. Let’s kick things off by prepping our crust! Grease a 9-inch springform pan and mix those chocolate sandwich cookie crumbs with the melted butter until it feels like wet sand. Press it down firmly into the bottom of the pan and pop it in the freezer for about 10 minutes to set.
2. Now onto that delicious cookie dough! In a bowl, cream together the room-temperature butter, brown sugar, and granulated sugar until it’s fluffy and dreamy. Stir in the milk and vanilla extract for extra flavor. Gradually add the flour and mix until combined, then fold in those mini chocolate chips. Yum!
3. It’s time to assemble our ice cream cake! Start by spreading half of the vanilla ice cream over that chilled crust. Next, drop half of the cookie dough mixture in spoonfuls across the ice cream. Freeze this for about an hour. After that, spread the chocolate chip cookie dough ice cream over the cookie dough layer, adding the remaining cookie dough chunks on top. Freeze for another hour, then add the rest of the vanilla ice cream on top and freeze for 4–6 hours, or overnight until it’s nice and firm.
4. Let’s make that luscious ganache! In a small saucepan, heat the heavy whipping cream until it’s just about to simmer (don’t let it boil!). Remove it from the heat and pour it over the semi-sweet chocolate chips. Let it sit for around 2 minutes, then stir until it's smooth and glossy.
5. Final touches! Carefully remove the cake from the springform pan and place it on a serving platter. Drizzle the ganache over the top, spreading it evenly. Freeze for another 30 minutes to set everything perfectly.
