The Northeast Kingdom’s iconic, award-winning artisan creamery, Jasper Hill cave-ages the cheese made from their heritage Ayrshire cows in a 22,000 sq ft underground cave system built into Greensboro’s pastoral hillside. In the 7 specially calibrated vaults, cheese is scrupulously barked, washed, flipped, brushed, spiked & salted until arriving at optimal age, ripeness & flavor.
