Homemade Jalapeno Salt

Ingredients:
- 1/2 cup dehydrated jalapeños (about 10)
- 1 cup coarse kosher salt

Directions:
1. Start by washing and dicing your fresh jalapeños. Lay them out on a dehydrator tray and let them dry at 125°F for 6-10 hours, or until they're completely brittle.
2. Once dried, toss the jalapeños into the bowl of your food processor and pulse a few times to break them into smaller bits.
3. Next, add the coarse kosher salt to the mix.
4. Blend in the food processor until the jalapeños and salt are thoroughly combined and reach your preferred texture.
5. Finally, transfer your glorious creation into an airtight container to keep it fresh.

Taco Spaghetti

Ingredients
12 oz spaghetti
1 lb ground beef
1 packet taco seasoning (or 2 tbsp homemade blend)
1 can Rotel tomatoes (diced tomatoes with green chilies, undrained)
2 cups beef broth
1 cup tomato sauce
1 cup shredded cheddar cheese
1/4 cup diced red onion
Fresh cilantro for garnish
1 tbsp olive oil

Instructions
Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it into crumbles. Drain excess grease.
Sprinkle taco seasoning over the beef and stir well to coat.
Add Rotel tomatoes, beef broth, and tomato sauce to the skillet. Stir to combine and bring to a simmer.
Break the spaghetti in half and add it to the skillet. Stir to ensure the pasta is fully submerged in the liquid.
Cover and cook for 12–15 minutes, stirring occasionally, until the spaghetti is tender and most of the liquid is absorbed.
Sprinkle shredded cheddar cheese over the top, cover, and let the cheese melt for 2–3 minutes.
Garnish with diced red onion, fresh cilantro, and additional toppings if desired.

Ground Beef and Potato Taco Bowl

Ingredients:

1 lb ground beef
3 medium russet potatoes, peeled and diced
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning
1/4 cup water
1 cup frozen corn
1 cup canned black beans, drained and rinsed
1 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1/2 cup sour cream
1/2 cup salsa
1 avocado, diced
Salt and pepper to taste

Directions:

In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook for 10-12 minutes, stirring occasionally until golden and tender. Remove from skillet and set aside.

In the same skillet, add chopped onion and garlic. Cook for 2-3 minutes until softened.

Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 6-8 minutes.

Drain excess fat. Stir in taco seasoning and water. Simmer for 2-3 minutes.

Add in corn, black beans, and cooked potatoes. Stir to combine and cook another 2 minutes until heated through.

To serve, divide the beef and potato mixture into bowls.

Top with shredded cheddar cheese, sour cream, salsa, diced avocado, and a sprinkle of fresh cilantro.

Serve warm and enjoy!

Blackberry Lemon Bundt Cake 🖤🍋

Ingredients:

3 cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup unsalted butter, softened
1 ¾ cups sugar
4 large eggs
1 tbsp lemon zest
1 tsp vanilla extract
1 cup sour cream
1 ½ cups fresh blackberries

Lemon Glaze:
1 cup powdered sugar
2 tbsp lemon juice

Instructions:

Preheat oven to 350°F (175°C). Grease and flour a bundt pan.

Whisk flour, baking powder, baking soda, and salt.

Beat butter and sugar until fluffy. Add eggs one at a time, then lemon zest and vanilla.

Alternate adding dry ingredients and sour cream to the butter mixture.

Fold in blackberries gently.

Pour batter into bundt pan. Bake 50–60 minutes or until toothpick comes out clean. Cool 15 minutes, then invert.

No Bake Creamy Pecan Pie

INGREDIENTS

1 9-inch pie crust, unbaked
1 cup heavy whipping cream
1/3 cup powdered sugar
2 (8 oz) packages cream cheese, softened
1/2 cup light brown sugar
1/4 cup pure maple syrup
1 1/2 cups pecans, finely chopped
1/4 teaspoon salt

PREPARATION

Blind bake crust according to package directions. Let cool completely while you make the filling.
In a small bowl, beat the whipping cream and powdered sugar with an electric mixer until stiff peaks form.
In a separate large bowl, beat the cream cheese, brown sugar, salt, and maple syrup until smooth and creamy.
Fold the whipped cream into the cream cheese mixture until combined. Gently stir in 1 cup of the pecans.
Spread mixture into cooled pie crust and top with remaining pecans. Chill until firm, at least 2 hours and up to overnight.

Garlic Beef Noodles

Ingredients:

For the Beef:
1 lb ground beef
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp apple juice
1 tbsp brown sugar
2 cloves garlic, minced
1 tsp grated ginger
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
2 tbsp vegetable oil

For the Noodles:
1 lb wide egg noodles or your preferred noodles
2 tbsp vegetable oil
2 cloves garlic, minced
2 green onions, thinly sliced (for garnish)
1/4 cup chopped scallions, for garnish
Sesame oil, for garnish

Directions:

1️⃣ In a large bowl, combine ground beef, soy sauce, oyster sauce, apple juice, brown sugar, minced garlic, ginger, pepper, and red pepper flakes. Mix well and marinate for at least 15 minutes.
2️⃣ Cook the noodles according to package directions. Drain and set aside.
3️⃣ Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
