Ground Beef and Potato Taco Bowl
Ingredients:
1 lb ground beef
3 medium russet potatoes, peeled and diced
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning
1/4 cup water
1 cup frozen corn
1 cup canned black beans, drained and rinsed
1 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1/2 cup sour cream
1/2 cup salsa
1 avocado, diced
Salt and pepper to taste
Directions:
In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook for 10-12 minutes, stirring occasionally until golden and tender. Remove from skillet and set aside.
In the same skillet, add chopped onion and garlic. Cook for 2-3 minutes until softened.
Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 6-8 minutes.
Drain excess fat. Stir in taco seasoning and water. Simmer for 2-3 minutes.
Add in corn, black beans, and cooked potatoes. Stir to combine and cook another 2 minutes until heated through.
To serve, divide the beef and potato mixture into bowls.
Top with shredded cheddar cheese, sour cream, salsa, diced avocado, and a sprinkle of fresh cilantro.
Serve warm and enjoy!
