- 1/4 cup cold salted butter (cubed) (for crumble topping)
- 1 cup granulated sugar (for caramel sauce)
- 6 tbsp salted butter (cubed) (for caramel sauce)
- 1/2 cup + 1 tbsp heavy cream (for caramel sauce)
- Pinch of flaky sea salt
Directions:
1. Start by making the apple filling! In a saucepan over medium heat, melt the butter and toss in your sliced apples along with the apple cider, brown sugar, cinnamon, nutmeg, cloves, allspice, lemon juice, cornstarch, and water. Cook until the apples are tender, then set aside to cool.
2. Preheat your oven to 350°F (175°C) and let’s make the crust. Combine graham cracker crumbs and melted butter until well blended. Press this mixture firmly into the bottom of a springform pan, and bake for 10 minutes. Allow it to cool.
3. For the creamy cheesecake filling, beat the cream cheese and granulated sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla, cinnamon, nutmeg, and cloves. Pour half of this luscious batter over your cooled crust, spread the apple filling over it, and then top with the remaining cheesecake batter.
4. Now, time to bake! Create a water bath by placing the springform pan into a larger baking dish filled with boiling water, making sure the water reaches halfway up the sides of the pan. Bake for 1.5 to 1.75 hours until the edges are set but the center has a slight wobble. Turn off the oven, let it cool inside for an hour, then chill in the fridge for at least 6 hours or preferably overnight.
5. While your cheesecake chills, let’s whip up the apple topping. In a saucepan, combine the topping ingredients and cook until the apples are tender. Let this cool too.
6. Next up, the crumble topping! Mix all those ingredients together until crumbly. Spread it out on a baking sheet and bake at 350°F (175°C) until golden brown (about 12-20 minutes). Let it cool completely.
7. For a delightful touch, let’s make the salted caramel sauce! Melt the granulated sugar in a saucepan over medium heat until it turns golden brown. Stir in the cubed butter and heavy cream until smooth. Cool slightly, then finish with a pinch of flaky sea salt.
8. Finally, it’s assembly time! Once your cheesecake has completely chilled, top it with the cooled apple topping, sprinkle on the crumble topping, and drizzle generously with that mouthwatering salted caramel sauce. Slice it up, serve, and savor every single heavenly bite! Enjoy!
