Just picked this beauty straight from the garden and turned it into golden, crispy breaded eggplant cutlets! 🍆🔥

There’s nothing like using fresh eggplant you grew yourself — the texture is firmer, the flavor is sweeter, and you know exactly what went into it. Sliced them up, gave them a quick dip in egg, a good coating of seasoned breadcrumbs, REPEAT! and pan-fried until perfectly crisp.

These are perfect on their own with a sprinkle of sea salt, layered into a sandwich, or smothered in sauce and mozzarella for eggplant parm.
