We are celebrating with Ruben sandwiches on fresh sourdough Rye bread. The dough was a lot thicker and lower hydration, which is perfect for a tighter crumb for sandwiches.

I found this recipe on website and altered it slightly to fit our dietary needs. It could easily be used for actual enchiladas as well, which we might try next time. Ground beef would also work for this recipe.

A look into my oven 👀

I'm replenishing my stock of breadcrumbs using 2-3 day old bread. Having this pantry staple on hand made with bread I know is clear of any allergens helps eliminate some of the mental load of meal prep. It is also a great way to save money and use up bread that might have otherwise been thrown away.

Making breadcrumbs is super simple:
- Blend bread in blender or food processor to desired texture
- Spread onto baking sheet
- Bake at 275° for 20-25 min or until completely dried out, stirring throughout
- Let cool and store in an airtight container

Note: Stale bread actually works best since it is already dried out and shortens the bake time.
