How about a ‘Flow With Glō’!
One-Pot Teriyaki Chicken Casserole, Recipe This Week!

This teriyaki chicken casserole is a tasty dish packed with rice, flavorful chicken, and crisp, tender stir-fry vegetables. Everything, including the rice, bakes together in one dish, making it a foolproof recipe for an easy weeknight dinner. Let’s try it!

INGREDIENTS

1 1/2 cups uncooked sushi rice or short grain white rice, rinsed and drained

2 cups boiling water

3 cups cooked chicken, cut into bite-sized pieces

1 (12 to 14.4 ounce) bag frozen stir fry vegetables, cooked according to package directions

1 cup teriyaki marinade and sauce, plus more for serving, such as Soy Vay® Veri Veri Teriyaki® Marinade and Sauce

sliced green onions and sesame seeds, for garnish

Sriracha sauce and soy sauce, for serving (optional)

DIRECTIONS

Preheat the oven to 350 degrees F (176 degrees C). Lightly grease a 9x13-inch (3-quart) baking dish with cooking spray.

Place rinsed and drained rice in the prepared baking dish. Carefully pour boiling water over rice. Cover the dish tightly with foil.

Bake in the preheated oven until water is absorbed and rice is tender, 20 minutes.

Remove from the oven and let stand, covered, for 5 minutes. Uncover and fluff rice with a fork.

Stir in chicken, cooked vegetables, and teriyaki sauce until well combined.

Bake, uncovered, until casserole is heated through, about 15 minutes.

Garnish with green onions and sesame seeds. Serve with additional teriyaki sauce and Sriracha, if desired.

INGREDIENTS

* 1/2 cup Granulated Sugar
* 2 Tablespoons Cornstarch
* 1/8 tsp Salt
* 2 cups Whole Milk
* 2 tbsp Butter
* 2 Large Eggs
* 1/3 cup Fresh Squeezed Lemon Juice
* 1/4 teaspoon Lemon Extract

INSTRUCTIONS

* Whisk together sugar, cornstarch and salt in a medium saucepan.
* Whisk in milk and bring to a boil over medium heat stirring constantly. Allow to cook for 2 minutes.
* Place the eggs in a separate bowl and lightly beat them. Then stir in 1 cup of milk mixture from the sauce pan into the eggs and then slowly whisk the egg mixture back into the sauce pan.
* Bring to a boil and reduce the heat to low. Cook and stir for 2 more minutes.
* Remove from the heat and stir in butter, lemon juice and lemon extract.
* Transfer to serving dishes and chill.
* Then the pudding is ready to serve and enjoy!

RECIPE NOTES

We love serving this pudding topped with fresh whipped cream.

Refrigerate any leftovers in an airtight container for up to 4-7 days.

It’s very important to gradually add the warm mixture to the eggs before adding them into the saucepan to avoid scrambling the eggs so make sure not to skip this step in the recipe.
